00:00Guys, welcome back to Tasty Tailgating, presented by Pepsi.
00:03I hope everyone had a wonderful Thanksgiving yesterday.
00:05Today, we're going to tackle those leftovers.
00:07Let's get cooking.
00:12Alright guys, Thanksgiving leftovers.
00:14Now, this is arguably the best part about Thanksgiving.
00:16You have tons of stuff in the fridge from yesterday.
00:18How do you use it?
00:19Traditionally, everyone makes a sandwich.
00:21Nothing wrong with that.
00:22There's nothing better than a leftover Thanksgiving sandwich.
00:25But, for the past two or three years, my go-to has taken the same concept
00:29and make a dumpling.
00:30So, today, I'm going to show you how to make the ultimate leftover Thanksgiving dumplings.
00:34Very easy.
00:35What you're going to need?
00:36Biggest thing, dumpling wrappers.
00:37You can get these.
00:38Most supermarkets will have these.
00:40They're going to be frozen.
00:41You should be able to get these anywhere.
00:43And now, I have our turkey.
00:45I have some leftover stuffing.
00:46I sautéed some mushrooms here.
00:48And then, I have cranberry sauce and gravy.
00:50But, you can mix and match this with whatever you have left over.
00:53You have some mashed potatoes.
00:54Great.
00:55You have some roasted vegetables, roasted carrots.
00:57Chop those up.
00:58Great.
00:59That'll work.
01:00Really make this one your own here and have fun with it.
01:01It's going to taste good no matter what.
01:02You're just putting it all back together.
01:04To get started, this one really is a—we're not doing any cooking since it's all done.
01:08I'm going to slice a green onion, but that's about it.
01:10That's as hard as this one's going to be.
01:12This will just be our dumpling filling.
01:13I got a little bit of chopped turkey here.
01:15Got a little bit of our stuffing.
01:17I love—stuffing's my favorite part about Thanksgiving.
01:19So, I'm going to go a little heavy on the stuffing.
01:21Some mushrooms in here.
01:22I like the mushrooms.
01:23Let's go all the mushrooms.
01:24I'm going to go a little bit of soy sauce.
01:27We're still making dumplings, so we're still doing a little Asian fusion.
01:30And then I love a little chili oil, a little chili crisp here.
01:34And here I have my gravy.
01:36Now, when you put your gravy in the fridge, it's going to clump up like this.
01:39Totally fine.
01:40Just put it in as it is.
01:41As it reheats, it's going to melt.
01:43It's going to thin out, and your dumpling's going to be super, super bursting with flavor of that gravy.
01:48So, gravy goes in there.
01:49And then cranberry sauce you can put in.
01:51I'm going to save this.
01:52We're going to make a dipping sauce with the cranberry.
01:53But if you want to have the cranberry sauce in there, by all means, go for it.
01:56So, let's give this all a good mix.
02:00Nice.
02:01That's looking good right there.
02:03And then just to bring this thing, just to bring this all together, a little bit of scallion.
02:09Slice some of this up.
02:10Get a little bit of freshness, a little bit of crunch.
02:11That can join our bowl.
02:13All right.
02:14Now we're talking.
02:15This is looking great.
02:17Grab your dumpling wrappers.
02:18Lay them out like this.
02:19Now, the thing with dumplings to be mindful of, don't overstuff them because then folding them is going to be a mess.
02:24It's going to go everywhere.
02:25Do a little less than you think.
02:27And it's hard.
02:28This is hard to do.
02:29Like, that's probably perfect.
02:31Now, to wrap these, you're going to want to get a little dish of warm water.
02:35Just dip your finger in.
02:37And you're going to go right around, do a semicircle of water.
02:44And then to fold, you take it up.
02:47And if you want that traditional dumpling shape, pat it down with one hand.
02:51And then start kind of folding.
02:54And you crimp.
02:56And, you know, I'm not perfect at this, but you kind of get the idea.
03:01It's a crimp and shut.
03:04And keep setting that stuffing in.
03:06That's why you want to go less is more because you see even that is already starting to pop out on me.
03:10When I was living in China, you'd walk by just street restaurants, dumpling shops,
03:14and you'd have these old 80-year-old Chinese ladies just doing 10 seconds a hand.
03:19It's crazy to watch.
03:20Now, we'll be pan-frying these.
03:23So get a pan, medium-high heat, just a little bit of oil.
03:27Okay, once your pan is hot, take your dumplings flat side down.
03:30And these will start to crispen up and fry on that bottom.
03:33Make sure they're at, like, do a little press down to get them nice and flat so you get a nice crispy bottom.
03:38Okay, perfect.
03:39We'll let those start to fry up.
03:40While that's going, we're going to make our quick dipping sauce.
03:42Remember I said we had our cranberries we're going to use?
03:44It's going to be soy sauce, a little black vinegar.
03:46If you don't have this, don't worry.
03:47You can just do soy sauce and the cranberry sauce.
03:49And then that cranberry sauce.
03:51It's going to be a nice little sweetness in there.
03:53Give that a mix.
03:54Do one more little scoop of cranberry.
03:56Check the bottoms.
03:57You want to see them golden brown and crispy on the bottom.
03:59Now we're ready for the next step.
04:01Now, to cook the rest of that dumpling dough, we're going to steam them.
04:03So a little bit of water in the pan.
04:10And then cover.
04:11And turn the heat down a little bit.
04:12Okay, and then after, like, two or three minutes, take off the lid here.
04:16And beautiful.
04:18That's exactly what you're looking for.
04:19The dough is cooked all the way through.
04:21The dumplings are piping hot.
04:23We'll put those on a plate, and that's all there is to it.
04:25It's that easy.
04:26Look at these.
04:27Nice, crispy bottoms.
04:28Serve them skin side up here.
04:30Just a little more scallion on top.
04:33And we'll just do a little bit of that dipping sauce, too.
04:35I actually like a little piece of cranberry on each one, if you can get it.
04:40I actually learned this little restaurant called Cherry no longer exists in New York.
04:43Used to do this.
04:45All right, and there you go.
04:46That's how you transform your Thanksgiving leftovers into these delicious dumplings.
04:50It's a fun way to mix it up.
04:51Everyone knows the sandwich.
04:52Nothing wrong with that.
04:53But this will surprise some people.
04:55This will wow your guests.
04:56All right, let's give these a try.
