00:00Break out the brie, we're havin' a party.
00:03Brie is the perfect cheese for entertaining
00:05and I've got three delicious appetizers
00:07that are all very different and way more extravagant
00:10than just slappin' some jelly on a wedge of cheese.
00:12I'm gonna start with cranberry brie pull-apart bread.
00:15We know that brie tastes the best when it is warmed up
00:18and that's what's about to happen.
00:19Get yourself a loaf of crusty bread.
00:22This is just an Italian bowl, you could use a sourdough,
00:26any sort of loafy, crusty bread's all you need.
00:29And we're gonna take it and we're gonna make slits
00:31in it diagonally, both ways,
00:33just don't cut all the way through.
00:34That's gonna hold our cheese.
00:37So you're creating these little squares
00:40and this is what you'll end up pulling out.
00:42What's great about this type of recipe
00:44is that you don't need any extra little special dippers
00:47or crackers because it's a self-contained chip and dip
00:50type situation right here.
00:51So we've created all our little nooks and crannies here
00:54and that's what we're gonna slide
00:55our cheese and cranberries in.
00:57But first, we're gonna make a little flavorful butter.
01:00Melt some butter, get some fresh herbs,
01:03rosemary and thyme into our melted butter
01:05along with some honey, salt and pepper.
01:08Okay, so I'm gonna drizzle about half of this
01:11in the nooks and crannies
01:13and then I'll save the rest for the top.
01:15This way we get flavor all throughout.
01:17Now for the star of the show,
01:19you just need about eight ounces of brie for this.
01:23You're gonna cut this into slices
01:25and then stick the slices in all the cuts that we made.
01:28And listen, the rind is okay to eat
01:30so we are not cutting that off.
01:31Those are usable pieces.
01:32All right, so I've gone all in one way
01:34and then you still have a little leftover cheese
01:36so you'll go kind of fill in some of those empty spots.
01:41And now we have to do the cranberries
01:42so just some dried cranberries.
01:45You want these to be scattered around more like confetti.
01:49All right, so I'm gonna place this on a baking sheet
01:52that's covered with either foil or parchment
01:54and then we're gonna drizzle it
01:55with the rest of our herb honey butter.
01:59350 for just about 20 to 25 minutes.
02:02Oh yeah.
02:04There's nothing you have to do.
02:04I mean, now it's just ready.
02:05Totally make that in advance and then you just serve it.
02:08Then you could take some more herbs
02:10if you did go out and purchase them just for this recipe.
02:13This is one of those things that just looks more impressive
02:16and looks like it took a lot more time
02:17than it actually did.
02:19And the whole thing is just like
02:20a bread bowl of perfect bites.
02:24Mm.
02:26You get the honey, you get all those herbs.
02:28Of course, the star of the show, the brie.
02:30It's buttery, it's sweet, and savory.
02:34This might be your new favorite baked brie.
02:36This next recipe is not only a recipe
02:39but like a brilliant hack.
02:41We're going super savory here.
02:42This is a garlic butter brie.
02:44Did you know you could bake the brie in the box
02:48in which it comes?
02:49Okay, so unwrap it and then put it back
02:52in its little case.
02:55And then you're just gonna score the top a little bit
02:57so that the flavoring gets all inside.
03:00Then we're just gonna make a little garlic butter.
03:02You can be the judge on how much garlic
03:03you wanna put in here.
03:05All right, then I'm just gonna pop this in the microwave
03:06to melt and flavor together.
03:09Okay, this is so flavorful right here.
03:12I'm gonna add in a little salt and pepper.
03:13All right, then we're just gonna spoon this over the top.
03:17Just gonna give it a little zhuzh
03:18to start working the butter down.
03:21This goes into the oven just until it's all gooey
03:23and melty.
03:24350, maybe 10 to 15 minutes.
03:26Maybe the easiest one.
03:29Oh, see the jiggle?
03:31That's what you want.
03:32Now, he did come open a little bit.
03:34It's okay, it's okay.
03:36We're gonna put it in the top.
03:38Serving and cleanup could not be any easier.
03:41Listen, the French know best when it comes to brie
03:44and they just serve it simply like loaded on a baguette.
03:48So you could just put sliced baguette here
03:49or I just bought some of the ones that are already toasted
03:52and turned into crostini.
03:54Okay, so put your bread in.
03:55Now you can decorate it.
03:56You could do any herb you want here, really.
03:58You could do parsley, basil.
04:00And then I'm also gonna kick it up
04:01with a little bit of crushed red pepper.
04:05Ooh.
04:10Mm.
04:11Going the garlicky, buttery, savory route, A plus plus.
04:15I will not have another bite without a glass of wine.
04:18This is like the perfect dinner.
04:23We could stop here, but we won't.
04:26All right, my final trick is going to be
04:28baked brie wrapped in pastry
04:29because that is by far the most popular way
04:32to serve brie at a party, I think.
04:34But we're not just gonna slap some jelly in the center
04:36and call it a day.
04:37How about caramelized onion, bacon, and fig jam brie?
04:41Long name, minimal ingredients.
04:43We're talking about five ingredients here.
04:45Starting with our onions.
04:47We're going to get those super sweet and caramelized.
04:50Let them go, medium low, stir occasionally.
04:53Takes a little bit of time,
04:55but something you can totally do in advance.
04:57While that happens, we'll cook some bacon.
04:59So keep it simple, into the oven.
05:02When I do brie and pastry,
05:04I like to put my fillings in the center of the brie
05:07versus sitting on top and then wrap it like that
05:09because that way the pastry stays nice and dry
05:11and it doesn't get too soggy.
05:13I like to cut my brie in half
05:14and I put my fillings on the inside.
05:16And then for the pastry,
05:18puff pastry is where you wanna go here
05:20because it's like super indulgent and rich.
05:22So I'll put the bottom half in.
05:24I'm going in with fig spread.
05:26There's lots of different varieties.
05:27You can use whatever kind of jelly you like or have on hand.
05:30You could do like an apple jam, something like that.
05:32You do you.
05:34Onions, nice and caramelized.
05:36Purely optional, but this is a way
05:38you can kind of finish them off,
05:40especially if you have any remnants
05:41on the bottom of your pan.
05:42Just add in like a teaspoon or two of balsamic vinegar
05:46and it'll just take them up a little notch,
05:48but this is optional.
05:50All right, and these will just go right on top of our jam.
05:53So it's gonna kind of blend in with that fig jam
05:56and be so, so good.
05:58I'm gonna add in a little bit of cracked pepper
06:00and then we'll just put our bacon right on top.
06:03You do want it crispy
06:04because everything else in this situation is soft.
06:08We like texture.
06:09Okay, bacon.
06:11Then I'm gonna spread just a little more fig jam
06:13on the top piece just to glue it all together.
06:17Now we're gonna take our pastry,
06:20wrap it up like a present,
06:22and I always turn it on its side
06:24and put the seam side down
06:25just so it's a little prettier on top.
06:27You could, you know, cut little shapes
06:29like leaves or hearts or whatever and put it on top.
06:31We're not gonna be fancy today.
06:33Then you wanna brush it with some egg.
06:35A little water loosens it up, makes it, you know,
06:37really light.
06:39We're not trying to have any scrambled eggs on the top.
06:42All right, and then just a very light coating on the brie.
06:45This goes in 375 till it's all golden brown and beautiful.
06:50It could fully be made to that stage
06:53well before your party starts
06:55and then just pop it in the oven right before they come.
06:57This looks gorgeous.
06:58It is starting to ooze a little bit,
07:00but she fine, y'all, she fine.
07:03My daughter insists on grapes every time we have brie,
07:07so I'm gonna decorate the platter a little bit.
07:09I just like a really, like, sturdy, hearty cracker.
07:13Nothing like carbs on carbs.

07:23You know, the first one had our, like, sweet moment.
07:25The next one was all savory.
07:26This is the perfect combination.
07:28You get that salty bacon.
07:29The way those onions that have natural sweetness, though,
07:31blend in with that fig jam.
07:33Y'all, so sweet, delicious, buttery, rich
07:38from the pastry and the cheese.
07:41So damn good.
07:43Hot, gooey, rich, and creamy.
07:46Who doesn't want brie at their next party?
07:48Brie cheese is so versatile.
