00:00A few things that can never be missed on a Christmas table are the Christmas biscuits
00:06that are made and baked in the area. And my dad used to make them as well for the whole
00:11family. I remember, you know, preparing literally tens of kilos of the stuff. My mom and dad
00:19used to prepare like 30 or 40 trays of Christmas biscuits in preparation to the festivities
00:26because that was our family Christmas presents. Along with recreating his family's festive
00:31biscuit tradition, at this time of year Giuseppe also puts together a panettone or two. And
00:36he's encouraging us all to do the same. It's a very simple but very effective way to put
00:42a nice dessert on the table is to use a panettone, even, you know, the relatively modestly priced
00:50ones that you could buy in supermarkets. You can toast them on a dry skillet and then
00:56smother them with brandy sauce, turning them into a really nice warming pudding that is
01:03absolutely perfect on the Christmas table. With lots of bakes being gifted between friends
01:08and family, it's likely you might have a bit left over come January. But in Giuseppe's
01:12house, nothing goes to waste. So you can, for example, you can use it in trifles. You
01:17can use it, you can swap the ladyfingers in tiramisu for slices of panettone and pandoro.
01:26But I think that you just try to, you know, stretch them as much as possible. You know,
01:33even if you end up eating turkey sandwiches for like a couple of weeks, what's wrong with
01:39that? I'm not complaining. The idea is to, the way I do it at home is to freeze as many
01:46leftovers as possible. So I try not to keep them in the fridge because, you know, it's
01:50very difficult to make sure that you're using everything in the best possible way. But if
01:54you portion them up and you freeze them, it's my office lunch sorted for the whole of January.
