Most people believe that alcohol will “cook out” of food when it's simmered, but studies suggest that this is total myth. Here's what's really going on.

00:00If you thought the alcohol in your pasta sauce cooked off completely before the pasta hit the table, think again.
00:06Alcohol begins evaporating or cooking off when the liquid that it's in reaches 173 degrees Fahrenheit.
00:14However, it never totally evaporates away.
00:18After 15 minutes of simmering, 40% of that vodka still remains.
00:24After 30 minutes, 35% is still there.
00:27After two hours, there's still 10%.
00:30The alcohol actually never completely evaporates.
00:34If you wanted to get the alcohol completely gone, you would have to basically just boil the sauce away completely.
00:41So that vodka that you put in your penne alla vodka and then simmered for just five minutes with the pasta, guess what?
00:48It's mostly still there.
