00:00Typically, you'd want to use, you'd want to wash this.
00:04It's better if we can wash it.
00:06But since our dish is a rock and roll, what I would do is parboil it.
00:11So that we can wash it and clean it at the same time.
00:15So that it won't be too soft.
00:18So that it won't have meat or fat to eat.
00:21But there's a little bit.
00:22We'll also use chicken neck.
00:24The chicken neck, you can cook this for 5 to 8 minutes on very high heat.
00:30Whereas the heart, this is like a meat.
00:34So I'll put it at the same time.
00:36In our batch of feet and neck.
00:38So there's a nice boil.
00:40Actually, it's a gentle simmer.
00:42That's happening in our pressure cooker.
00:44You can see.
00:46Let's just transfer what we parboiled.
00:50And then earlier, we mentioned the cooking temperature of the liver and heart.
00:54For this one, we're not going to cook the chicken neck at the same time.
01:01To tenderize our chicken feet.
01:04Let's say that our chicken neck can be cooked in 20 to 30 minutes on normal heat.
01:11And our chicken feet, around 1 hour or 1 hour and a half.
01:17So if we put it in the pressure cooker, our chicken neck will be tender.
01:25The chicken heart is okay.
01:27So we'll just put our garlic.
01:29Season it with salt and pepper.
01:31And then we'll cover it.
01:33So we'll just put it back after 30 minutes of pressure cooking.
01:36So while we tenderize our chicken feet and chicken heart.
01:41Let's prepare our ingredients.
01:44So we've been pressure cooking our chicken feet for close to 40 minutes.
01:49At this point.
01:52That's okay.
01:58So while we're releasing the pressure, we can start the other components.
02:03And then the chicken neck that we blanched, we'll brown it.
02:14After that, let's put our tomatoes and onions.
02:22And then to make it more even, so that Charlie won't get confused.
02:26We'll put the tomato paste.
02:28It will intensify the redness of our Afritada dish.
02:32So we'll just saute this.
02:34And then we'll put the chicken breast.
02:38And then after that, we'll just boil it.
02:40Season it with some soy sauce.
02:44And some brown sugar.
02:46After that, let's put our potatoes and carrots.
02:50And chicken liver.
02:56Let's adjust the seasoning.
02:59And then we'll put some salt.
03:02And then we'll put some pepper.
03:05Let's adjust the seasoning.
03:08And then, let's put the chicken feet.
03:12Simmer it until the chicken feet absorbs the seasoning.
03:17And of course, the Malunggay that Charlie is missing.
03:21And then finally, our bell pepper.
03:27And then after that, it's time to serve.
03:34Food Explorers, the unique Afritada is now ready to be eaten.
