00:00I don't know when bean salads became cool again,
00:02but I'm here for it.
00:03These are affectionately known as dense bean salads or DBS.
00:07They're super popular all over social media.
00:10They've been filling my feed.
00:11They sound delicious, so grab a can of beans.
00:14Let's start cooking.
00:15The first salad I'm making
00:16is a steak chimichurri dense bean salad.
00:20This recipe comes from Violet Cooks,
00:23who I think is the one that made dense bean salads.
00:25Such a trend right now.
00:27She's got tons of great creations.
00:28This first one is hers, steak chimichurri,
00:31with a couple of my own little twists.
00:33You wanna choose a couple different beans per salad
00:36so they have different textures.
00:37The beans I'm using for this
00:38are pinto beans and garbanzo beans.
00:40The pinto beans are going to be soft and creamy,
00:44and the garbanzo beans are gonna have
00:45a little more bite and texture.
00:47You just wanna drain and rinse whatever beans you're using.
00:50For steak chimichurri, I've gone ahead
00:52and marinated a flank steak.
00:54This is just a very simple, flavorful marinade.
00:56This has been soaking overnight,
00:57so I'm gonna get that in a hot skillet.
01:01While the steak cooks, I'm going to make
01:03all the other components for the salad.
01:05When you think of a chimichurri,
01:07you think of a pureed sauce that's mainly parsley,
01:10some cilantro sometimes.
01:11Cilantro's not always in it, but it's always in mine.
01:14Instead of pureeing that,
01:15that's gonna be the base of our salad,
01:17so we're just gonna chop everything up.
01:20Start adding everything to the bowl.
01:22Roasted red peppers.
01:24You just wanna pack it with different textures,
01:26flavors, obviously, and colors.
01:28I'm gonna add in some red onion.
01:30I love the bite of a red onion.
01:34What else do I wanna put?
01:35I'm going to add in some cheese.
01:38I'm using this Ranchero Queso Fresco.
01:41It's gonna have kind of like
01:42a little sharp, crumbly bite to it.
01:44Those are my main components to the salad,
01:46so we'll add the steak in,
01:48and then for the dressing that binds it all together,
01:51it's the other components of a chimichurri.
01:53You've got a little red wine vinegar,
01:55a little lemon, some fresh garlic goes in,
01:58a little crushed red pepper.
02:00Oregano is very common in chimichurri.
02:03Then a little salt.
02:05Then I'm gonna whisk that together
02:07with some extra virgin olive oil.
02:08Give it a taste.
02:10That's quite delightful.
02:14All right, we will rest the steak.
02:17Gonna let that rest for about five minutes
02:19before we slice it up and add it to the salad.
02:22I'm gonna slice it and then kinda dice it,
02:25so you get kinda bite-sized pieces
02:27that go along with everything else that's in the salad.
02:31This is a salad that will satisfy
02:34even your hungriest eaters.
02:37I'm okay if some of the pan juices go in there.
02:40And then we pour the dressing over as well.
02:43You know that's gonna be good.
02:45Definitely wanna see a lot of green
02:46to remind you that this is chimichurri.
02:50I didn't even have to reach for it.
02:55Mm.
02:56The beans absorb that dressing a little bit,
02:58so it's like little pockets of little flavor bombs in there
03:02amidst all the fresh veggies, the crunch,
03:06the savory meat.
03:09That's good.
03:10The next recipe is my creation.
03:12I'm calling Supreme Pizza DVS.

03:19Think of all the flavors that we love
03:22in a fully loaded pizza.
03:25In a bowl of bean salad.
03:26For the beans, I'm going to do
03:28cannellini beans and garbanzo beans.
03:30This recipe requires no cooking.
03:34This is a salad that I would put in my daughter's lunches.
03:39They would totally snack on this throughout the week.
03:42Or they would take this in their school lunch.
03:44For the protein in this, of course,
03:48pepperoni because pizza.
03:50And also, I'm gonna do some salami.
03:52I love using the salami and pepperoni
03:55because you can eat it room temperature, too.
03:57Salami.
03:59I just love the salty bite this gives.
04:02Of course, the pizza sauce is full of tomatoes.
04:05I'm using these little heirloom ones.
04:07You can just use all red, whatever.
04:09And then I'm using sun-dried tomatoes
04:11as part of the dressing.
04:13So I'm gonna cut these in half or quarters
04:16if they're big ones.
04:18The cheese going in this one.
04:20Mozzarella, obviously.
04:22These are the little mini mozzarella balls.
04:25So you can just leave them whole or cut them in half.
04:27I'm only gonna drain off about half of the marinade
04:31because the rest is just gonna add flavor to our salad.
04:33On the supreme pizza, you usually find olives
04:36and bell peppers and onions.
04:38So I'm putting all that in there, too.
04:39This is going to add that really fresh crunch
04:41that'll compliment those softer bean textures.
04:45I'm gonna use Castelvetrano olives
04:47because I just wanted the green flavor.
04:49You ever seen a spoon like this?
04:51It's for this.
04:52It's where the liquid drains out.
04:57Who knew?
04:58Castelvetranos are gonna be a really mild,
05:01kinda like sweet, a little nutty.
05:04It's already looking pretty
05:05and we haven't even put it in a bowl yet.
05:07I'm gonna kinda dice the onion up in this one
05:09so that it's kinda sprinkled throughout.
05:12All right, look at that rainbow of flavor.
05:16And now it just all gets mixed together.
05:18Oh.
05:21Oh, smell that.
05:23This is going in.
05:24Lots of fresh basil.
05:26All right, for the dressing,
05:27for that really intense kinda tomato flavor
05:29to remind us that this is pizza, so pizza sauce,
05:32I'm going with sun-dried tomatoes packed in the oil.
05:35I'm gonna use the oil, too.
05:37So I'm gonna put about like half the jar with the oil
05:41in a food processor.
05:42Two cloves of garlic and some white wine vinegar.
05:45Good pinch of salt, some pep.
05:47A lot, okay, a lot.
05:48Add in crushed red pepper because I like that in my pizza.
05:51That might have been a lot.
05:53And then oregano, again, so about a quarter teaspoon.
05:57I'm gonna get this pureeing and I'll drizzle in the olive oil
06:00and we'll just do it until it's really good and creamy.
06:03I want this a little tangier than I would
06:04like in a salad dressing because everything in here
06:07is like really rich and creamy,
06:08so this is gonna kinda, you know,
06:10cut some of that richness.
06:11All right, let's see.
06:12Think pizza.
06:13Mm-hmm, mm-hmm.
06:21The beans kinda act as the crust, you know?
06:23Everything else is the topping.
06:24I love this one, that's delicious.
06:28Mm, satisfies the pizza flavor craving
06:32in a much little healthier package.
06:34Did I save the best for last?
06:36This one is a Thai chopped chicken DBS.
06:41All the flavors that you love in just a traditional,
06:44like, chopped chicken salad,
06:45but with beans added for extra filling.
06:48We're gonna start with some green cabbage.
06:49I kinda like chop it, dice it up.
06:54Yesterday for lunch I had Thai larb
06:56and you get that, like, peanut-y flavored meat
06:59and they wrap it in cabbage leaves,
07:00so this is gonna be reminiscent of that.
07:04This one's probably gonna be our biggest one
07:05because there's a lot that goes into here,
07:09but again, no cooking, no cooking required.
07:12Cucumber, seedless cucumber, and then dice it up.
07:17About half a bunch of cilantro.
07:20One bunch of green onions.
07:22I am gonna add a little confetti of orange
07:25with some matchstick carrots.
07:28I get the ones that are already chopped up,
07:29but then chop them just a little bit further.
07:33And a little kick of some jalapeno.
07:35I'm gonna mostly seed it.
07:37This is a really big one.
07:40Can you taste it?
07:41I feel like you can taste it just by looking at it.
07:43Okay, for the beans in this one, edamame.
07:46Does that just make sense?
07:48For this one, I'm gonna do some white beans, smaller scale,
07:51so I went with a navy bean here.
07:53That is not a candidate.
07:54Edamame has a lot of slightly crunchy bite to it,
07:58so this will be the creamy to balance the crunchy.
08:02I'm consistent, people.
08:04The navy beans are gonna be just smaller
08:05than the great northern beans.
08:08And then I'm adding in some chicken.
08:11Really just use rotisserie chicken here
08:13or any kind of cooked chicken that you want.
08:15And then optional, but I think not really optional,
08:19some chopped peanuts.
08:20This is going to just be that delightful extra crunch.
08:28Look at that.
08:29Is that not a big bowl of deliciousness?
08:31Hopefully by now, you've gotten enough Asian condiments
08:34in your pantry that you can whip this up.
08:36I think staples include rice vinegar,
08:38soy sauce, obviously, sometimes chili garlic paste.
08:41You know, these are things you should just have on hand.
08:43Rice vinegar is going in along with some fresh lime juice.
08:47Oh, you know what this means.
08:54Just works.
08:55Ginger is something you should keep on hand.
08:57It is so cheap and it lasts forever in the fridge.
09:01Peel it and then give it a little grate.
09:03I don't really want big bites of it in the dressing.
09:07And a garlic clove.
09:08And the little secret ingredient here is just peanut butter.
09:12This just gives you that good roasted, nutty flavor.
09:16Makes it real savory and kind of, I don't know, creamy.
09:20And some soy sauce.
09:22I want like avocado.
09:25Ask and you shall receive.
09:27Get that going and then I'll drizzle in the oil.
09:30Give it a little taste, you poo.
09:36It's good, it does.
09:37It needs a little drizzle of honey.
09:41Little sprinkle of salt.
09:45And now we dress it.
09:48Look at that.
09:50I feel like you can taste it from there.
09:52So you just go in.
09:54With a spoon, you come out with the perfect bite.
09:56It's gonna happen every time.

10:08We all know what to say.
10:09Slightly sweet, salty, creamy, crunchy.
