00:11The nobles would have ice shaved from the store, blending it with fruits, vermicelli and rose water,

00:22Centuries later, when the Arabs conquered Persia, they put their own spin on the recipe.
00:27Instead of using raw fruit, they created fruit syrups to mix with ice.
00:33They called it shabat, a name which would later inspire the word sorbet.
00:38Fast forward to the Renaissance, sorbet reached Italy through trade routes.
00:43The Italians fell in love with it and began experimenting, adding milk and egg yolks to their sorbets.
00:50They named this thicker version gelato.
00:52But the final touch came in France and England, where thick cream was added,
