Most ginger syrup is just water, sugar, and ginger; simmered and steeped. Easy to make and very enjoyable?
But we always thought that they lacked a little something - there was no wow factor. So we amped it up a bit with some extra spices, and came up with something that will blow your socks off!
Ingredients:
1 cup (250 mL) brown sugar
1 cup (250 mL) white sugar
2 cups (500 mL) water
5 oz (150g) sliced ginger
2 tsp (10 mL) cardamom pods
1 tsp (5 mL) whole allspice
1 tsp (5 mL) peppercorns
3 star anise pods
Method:
In a pot, combine the?water, sugars,and ginger.
Toast the whole spices in a dry pan until they just begin to become fragrant. Add the spices to the sugar and water mixture and bring it to a simmer. Simmer for about 15 minutes and then turn off the heat.
Allow mixture to steep until cool; then strain into a sealable container and store it in the refrigerator
Dry out the slices of ginger and eat them like candy.
2 Tbsp (30 mL) of syrup with
12 oz soda water and some ice makes a very refreshing glass of ginger ale.
