Pizza stuffed mushroom
Ingredietns:
Large fresh portobello mushrooms (stems removed) - 6
Ricotta cheese - 7 oz
Provolone cheese - 5 slices
Tomato paste - 7 oz
Onion (chopped) - ½
Garlic (minced) - 1 clove
Cherry tomatoes (chopped) - 3,5 oz
Salt, crushed black pepper, fresh parsley, olive oil
Kcal per 100 g - 101
Preparation:
Preheat your oven to 375 °F
Finely chop onion and mince garlic. Sauté in olive oil
Add tomato paste and season to taste
Cook mixing until the sauce is of the desired doneness and thickness
Divide the sauce between the portobello mushroom caps
Place one slice of provolone cheese over each mushroom followed by the ricotta cheese
Arrange a few cherry tomatoes
Bake for 15-25 minutes or until done
Garnish with chopped parsley and serve
