In this Video, we are going to look at how to cook Mushroom Biriyani in Tamil. It is very simple to cook and let's have a look at the needed Ingredients
காளான் பிரியாணி செய்ய தேவையான பொருட்கள்: (Ingredients)
garlic cloves (பூண்டு பற்கள்)
Ginger (இஞ்சி)
cinnamon sticks (இலவங்கப்பட்டை )
cardamom (ஏலக்காய்) (3)
clove (2) (கிராம்பு)
fennel seed (1/2) (பெருஞ்சீரகம் விதை)

Seeraga Samba rice (500gm) (சீராகா சம்பா அரிசி)
Onion(வெங்காயம்)
Tomato (தக்காளி)
Mushroom (200gm) (காளான்)
Coriander leaves (கொத்துமல்லி தழை)
Mint leaves (புதினா இலைகள்)
salt (உப்பு)
green chili (3) (பச்சை மிளகாய்)
curd (3tsp) (தயிர்)
Lemon (1/2) (எலுமிச்சை)
Ginger garlic paste (இஞ்சி பூண்டு பேஸ்ட்)
kashmiri chili powder (கஷ்மீரி மிளகாய் தூள்)
Red chili powder (சிவப்பு மிளகாய் தூள்)
Oil (80ml) (எண்ணெய்)
ghee (நெய்)
Bay leaf (பே இலை)
Javitri(1)
Marathi mokku(1)
Star anise (1)
Kalpasi
clove (கிராம்பு)

How to Make Mushroom Biriyani: (காளான் பிரியாணி செய்முறை):

It may take 45 minutes to cook this recipe.
Step 1: Take garlic cloves, Ginger, cinnamon stick, cardamom, clove, and fennel seed.
Step 2: Grind everything in a mixie (add a spoon of water in between).
Step 3: Wash and soak the rice for at least 45minutes
Step 4: Add oil in a pan and fry thinly sliced onion, Cardamon
Step 5: Fry till golden brown.
Step 6: Add pounded shallots and green chili(3)
Step 7: Then add ginger garlic paste.
Step 8: Fry till oil comes out.
Step 9: In this stage, add tomato and salt. then add mint and coriander leaves. Then add kashmiri red chili powder and red chili powder. Mix it well. Fry till raw smell goes off.
Step 10: Add mushrooms and curd.
Step 11: Cook it well for 3 minutes.
Step 12: Then add water (1 and 1/2 cup water for cup rice). Add lemon juice.
Step 13: Add rice after 2 minutes. Stir everything well and cook for 5 minutes.
Step 14: In a Dosa Maker, keep the cooker on dosa maker and keep the heat in the sim. Step 15: Then add ghee as required and cook for 20 to 30 minutes. In between, stir it well for 2 to 3 minutes.
Step 16: After 10 minutes, stir the upper and lower layer of rice.
Step 17: Add ghee in between
Step 18: Switch off the stove once cooked.
Step 19: Cover and serve it later after 15 minutes.
