Andhra Chilli Chicken would be a great addition to a party menu as a starter/ appetizer or even a side dish to rice varieties like pulao or biriyani and even as a side dish with rasam rice.
Ingredients:
500 grams of Boneless chicken
8 -10 fresh green chilies - preferably little longer and thick ones
2 tsp Red Chilli Powder
1/2 tsp Coriander Powder
1 tsp Garam Masala
2 tsp ginger garlic paste
2 tbsp Curd
1 tsp Turmeric Powder
1 tbsp cornflour
Salt to taste
4 tbsp oil
Curry Leaves
Method:
1. Wash and pat dry the green chilies. Make a deep slit on it or cut into halves lengthwise and fry in the pan then add curry leaves, let fry it for some time.
2. In a bowl take the chicken, add salt, ginger garlic paste, garam masala, coriander powder, red chili powder, and curd. Mix well and leave it to marinate for 1/2 hour.
3. Heat oil in a pan, add garlic and fry it till it turns golden, add the chilies and fry it well for a minute or two.
4. Mix in marinated chicken, stir well for 2-3 minutes, cover it and cook for 5-6 minutes.
5. Add corn flour to the chicken and mix it.
6. Cook for further 2 minutes, take off the heat.
7. Serve hot with plain rice or any fried rice of your choice.
