Recipe Description:
Mutton Biryani
Ingredients:
Mutton 500 gm
Rice 500 gm
Onions (finely cut) 4 medium
Tomatoes (finely cut) 4 medium
Potatoes (cut in 4 pieces) 3 medium
Beaten yogurt ¼ cup
Garlic paste 2 tbsp
Ginger paste 2 tbsp
Whole green chilies 6-8
Oil ¾ cup
Bombay biryani recipe mix 1 packet
Orange food color as required
Method:
Heat oil then add onions and fry till golden. Then add mutton, garlic, ginger, tomatoes, yogurt and Bombay biryani recipe mix and cook for 10 to 15 minutes. Add 2 to 3 cups or as required water in mutton and cook on low heat when meat gets half tender then add potatoes and cook. When oil comes up then add green chilies and turn off the flame. Now in a separate pan add 12 glasses of water with 3 tbsp of salt and boil rice in it till one thread left. Then in a separate pan give layer of rice and gravy add orange food color then cook on high heat for 5 minutes then let it simmer on low heat for 10 minutes.
Arabic Paratha
Ingredients for Dough:
Plain flour 2 cups
Baking powder 1 tsp
Salt 1 tsp
Oil 2 tbsp
Hot water to knead
Ingredients for Filling:
Chicken mince 300 gm
Chopped onion 1
Chopped ginger garlic 1 tbsp
Oil 2-3 tbsp
Salt 1 tsp
Cumin seeds 1 tsp
Crushed black pepper 1 tsp
Red chili flakes 1 tsp
Lemon juice 2-3 tbsp
Chopped coriander 3 tbsp
Chopped green chilies as required
Egg 1
Other ingredients:
Cheddar cheese 1/2 cup
Clarified butter for frying
Method:
Mix all ingredients of dough and knead it with hot water and leave for ½ an hour. Heat oil then add cumin seeds, chopped onion, ginger garlic paste, chicken mince and fry it. Then add other spices as well and cook it. Now add egg and cook. In last add chopped coriander, chopped green chilies, lemon juice and let it cool down. Now make ball of dough and roll down. Then stuff chicken and cheese and again make ball then roll down and fry in clarified butter.
