Ghevda ki Sabzi or as it is known in Marathi- Ghevdyachi Bhaji is a stir fry, veg preparation made with one of the commonly found green vegetable- Ghevda or flat beans. Ingredients:

- 3 tbsp oil
- Asafoetida(Hing)
- 1 tsp Mustard seeds
- 5 Green Chillies(slit)
- 8-10 Curry leaves
- 3 onions(chopped)
- 1/2 kg Broad beans(Ghevda)
- 1/2 tsp Turmeric powder
- 1/2 tsp Red chilli powder
- 1 tsp Goda masala
- 1/2 tsp Garam masala
- salt
- Water
- 1 tbsp Jaggery
- 1/2 Lemon juice
- 1/2 cup grated coconut


Method:

1. Heat oil in a pan, and then add asafoetida, mustard seeds for tempering

2. Once mustard seeds are tempered, add slit chillies from the top along with curry leaves, onions

3. Saute it till the onions turn pink

4. Add Broad beans(ghevda) and saute it more for around 2-3 minutes and add turmeric powder, red chilli powder, goda masala, garam masala

5. Mix well and add salt accordingly with water

6. Now, Close the lid and let it cook on gas on medium flame and also keep sauteing in the middle

7. After cooking for around 10 minutes add jaggery, lemon juice, grated coconut

8. Now, Mix it and let it cook in steam for another 2 minutes

9. Take it out in a serving bowl and garnish it with some grated coconut
