Shahi Kitchen Masala Recipe| How To Make Shahi Masala| सुगन्धित रसोई मासाला
A flavorful powder made after grinding whole spices. I have started making this masala last month and it gives a tremendous taste and aroma to curries & dal. Must try this recipe at home and avoid using packed masala. It is a best substitute for kitchen king masala and it will save some money.

Ingredients for Masala-:
1) Cumin Seeds/Jeera - 2 tbsp
2) Carom seeds/Ajwain– 1 tbsp
3) Dry Red Chilli/Sukhi Lal Mirch - 6
4) Turmeric Powder/Haldi- 1 tsp
5) Coriander Seeds/Dhaniya - 4 tbsp
6) White sesame seeds/Safed til- 3 tbsp
7) Black Peppercorn pwdr/Kali Mirch - 1/2 tbsp
8) Green Cardamom/Hari Elachi - 25
9) Black Cardamom/Badi Elachi - 5
10) Bengal Gram/Channa Dal - 4 tbsp
11) Fennel Seeds/Saunf - 4 tbsp
12) Cinnamon/Dalchini – 6 sticks
13) Mace/Javitri - 6 pieces
14) Rock Salt/Kala Namak - 2 tbsp
15) Bay leaf/Tej patta- 6
Method:
1. Dry roast all ingredients and allow to cool.
2. Cool all the ingredients and grind into smooth powder using mixer or coffee/spice grinder. Sieve
powder through a big strainer, grind again if required and discard any large pieces of spice.
Cool powder masala to room temperature and store in air tight container.
