Chicken JAGERSCHNITZEL (chicken schnitzel with mushroom gravy⁉️)

Ingredients to cook the chicken Jagerschnitzel recipe from scratch:
1) 800 g/28 oz of skinless boneless chicken breast (4 chicken fillets/1 serving)
2) 3 tbsp of all-purpose flour
3) 2 eggs, beaten
4) 3 tbsp of finely-granulated breadcrumbs
5) 200 ml/7 fl oz of vegetable oil for frying the chicken schnitzel
6) 2 tbsp of olive oil for the mushroom gravy
7) 60 g/2 oz of red onions, finely chopped
8) 250 g/9 oz of canned mushrooms, rinsed and drained well
9) 300 ml/10 oz of chicken stock
10) 1-2 tbsp of cornstarch
11) 1 small parsley leaves bundle, chopped

How to make chicken JAGERSCHNITZEL step by step:
step 1: coat the chicken fillets with flour all over
step 2: break the eggs, beat them up with a fork, then coat the chicken fillets with egg all over
step 3: coat the chicken fillets with breadcrumbs all over
step 4: pour the vegetable oil for frying into a pan, wait to heat up over a medium-high temperature, then place the chicken schnitzels inside and fry them until golden on the bottom side (about 3 min)
step 5: flip the chicken fillets and fry them evenly golden (about 2 min)
step 6: take the chicken schnitzel out of the pan, drain the hot oil well, and set them aside to a paper towel to absorb the remaining oil
step 7: wash the pan, then pour the olive oil and wait to heat up over a medium temperature
step 8: place the red onions and fry them until slightly glassy (1-2 min)
step 9: place the drained mushrooms and continue frying for 1-2 min or until the mushrooms are lightly golden
step 10: pour the chicken stock, then season with some salt and ground black pepper to taste
step 11: simmer the mushroom gravy until pretty low (about 5 min)
step 12: add 1-2 tbsp of cornstarch if necessary and continue simmering while stirring until thick (1-2 min)
step 13: place chicken schnitzels on plates
step 14: top each chicken schnitzel with 1-2 spoons of mushroom gravy
step 15: sprinkle some chopped parsley over the mushroom gravy and serve the chicken Jagerschnitzel immediately
