00:02 - Hey guys, welcome to Kat's Kitchen Collective.com.
00:08 Today we are gonna be making butter.
00:10 Yep, you heard me, we're gonna churn our own butter
00:13 right here in our own home.
00:14 It's gonna be awesome.
00:16 It's gonna be a matter of minutes
00:18 until you have the creamiest, most delicious,
00:20 and most beautiful butter you've ever had
00:23 in your entire life.
00:24 And the best part, you're the one making it.
00:26 Here we go.
00:27 Okay, so like I said, we're gonna make our own butter.
00:30 There's only four ingredients, heavy cream, salt,
00:34 edible flowers, and honey.
00:36 And all you have to do is put some muscle into it,
00:39 or in our case, our brand new
00:41 Kenwood Kitchen Machine Mixer.
00:43 If you have an electric mixer, a handheld,
00:45 or a KitchenAid stand mixer, that's totally fine.
00:49 If you don't have either of those,
00:51 just get out those muscles right here
00:53 and start whisking away.
00:54 Either way, butter is gonna be surprisingly easy to make.
00:58 So our first step is to simply
01:00 add the cream into the blender.
01:03 So then you'll get to this stage,
01:04 which is the liquid will start separating from the butter.
01:08 And you just wanna scrape down the sides of the bowl,
01:12 as you can see we have done,
01:13 and continue whipping for about 30 more seconds,
01:16 and then we're gonna strain it all out.
01:19 We're gonna mix this on high for about five minutes.
01:23 (whirring)
01:25 Okay, so our butter is very obviously separated.
01:28 In fact, it's mostly stuck to my whisk here,
01:31 which makes my job easier.
01:33 So I put gloves on, and I'm just peeling the butter
01:36 off of the whisk, and I'm doing this over cheesecloth.
01:40 And if you're noticing some liquid
01:42 at the bottom of the bowl,
01:44 that is the dairy that has separated from the butter.
01:47 So all we're left with is just pure fat,
01:50 which we love fat here, so this is perfect.
01:54 And I have a bowl of water over here,
01:59 and that's just to rinse the butter
02:02 after we squeeze out all of the dairy.
02:05 So you want this to be clean butter,
02:09 you don't want any little remnants of the dairy milk.
02:14 So I'm just squeezing it through cheesecloth,
02:17 getting out any little bits left right there.
02:22 Okay, and what we are left with is delicious butter.
02:27 Butter!
02:31 So we're gonna just rinse that in our water.
02:34 And like I said, it's pure fat,
02:39 so you don't have to worry about it melting
02:42 as long as you're using cold water.
02:44 Don't put ice water in there or anything.
02:47 So now we're just going to return our butter into our mixer.
02:50 I've rinsed it out.
02:52 And to our butter, we are going to add
02:54 our one tablespoon of honey.
02:57 We're gonna add our flour.
02:59 So for this amount of butter,
03:01 we are going to add about a fourth a cup.
03:05 And the last thing to add is just our sea salt
03:07 to make it a nice, delicious salted butter.
03:10 So we are going to add, I would say, a half a tablespoon.
03:16 And we're gonna mix it back up until it's just combined.
03:20 So the very last thing to do
03:22 is we are going to roll the butter into a log,
03:25 and then we're gonna freeze it
03:26 so that when we slice into it,
03:28 you can see all those delicious, beautiful flowers.
03:31 So all you need is some Saran wrap,
03:33 and you'll just put your flour butter right in the center.
03:37 Gorgeous.
03:39 And then you're gonna basically roll it
03:43 like you would sushi.
03:44 So you are going to form a little log here.
03:49 And there might be some liquid
03:51 that comes out of the butter,
03:52 either from the dairy or from the honey,
03:55 and that's okay.
03:56 It'll be totally fine.
03:58 All right.
04:00 So then we are going to roll it
04:04 the rest of the way through.
04:07 Beautiful, and we're gonna put this right into the freezer.
04:09 And I can't wait to show you
04:10 what it looks like when we're all done.
04:12 All right, here's the moment of truth.
04:14 Our butter is nice and frozen.
04:16 It's nice and hard,
04:17 and we're gonna slice into it.
04:19 I have this delicious baked sweet potato
04:21 that I'm gonna devour 'cause I'm so hungry.
04:23 And we're gonna top it off
04:24 with our amazing homemade flour butter.
04:28 So I'm just gonna slice off a piece here.
04:32 Oh my God, it's so beautiful.
04:36 Isn't that gorgeous?
