How to Cook A Full Course Balinese Dinner!

00:16 Hi, this is Jean from Police Milderings and I'm at Anantara Club Resort in Seminyak, in Bali.
00:21 And I'm here with Chef Dan and Chef Niyandi and we are making Kokon.
00:28 This is a Balinese snapper we wrap in banana leaf.
00:32 We're going to wrap it in a banana leaf.
00:35 So what we're going to do now first is make the paste in which to sort of marinate the fish and cook it.
00:42 Balinese fish grilled snapper with banana leaf.
00:45 We make the paste first.
00:48 All the paste, with shallot, garlic, pepper, chili, galangal, turmeric, ginger, lemon grass, shrimp paste, brown sugar, tamarind, salt, pepper and vegetable oil.

01:16 We're sautéing the marinade sauce of the fish which we are going to wrap in banana leaf.

01:41 We're making chicken sauté, it's called sauté lelit, it's the Balinese version.

01:52 Until, yeah, until it smells good.
01:55 It smells good all the time.
01:57 I think it's enough.
01:59 Right now we just blended all the herbs and spices with the chicken.

02:21 If you like this, yeah, if you grill, you cannot do, it's no good for.

02:38 So now we're making the main dish, it's called besyak in the tumi.
02:42 It's grilled chicken with turmeric and garlic.

03:05 Alright, you take rest maybe five, maybe ten minutes, prepare for grill and some more.
03:14 And then we do everything, the sauté, the fish, the chicken.
03:18 And for dessert, I think until done, patesar, mancos, and the bisang goreng.
03:25 They've just set aside everything and are preparing the grill.
03:28 So apparently what's going to happen is we're going to grill everything all at the same time.
03:33 The sauté, the fish and the chicken, all going to be grilled at the same time.
03:37 And then we can eat.

04:15 And we've got the chicken, grilled chicken with garlic and turmeric.
04:20 And inside this is the snap roll.
04:25 I'm going to eat my sauté lilit, which is chicken sauté Balinese style.

04:40 So we're making bisang goreng or banana fritters.
04:43 We just mix rice flour and flour together.
04:48 And salt.
04:52 Water.
04:54 So I just mixed one to one ratio of rice flour and flour.
05:01 And just adding little bits of water until the batter is a pancake batter.
