Buffalo Burgers Grandpa Style Cooking Tutorial

00:00 So when I was in Texas, I had a huge craving for delicious, juicy American hamburgers.
00:04 And my grandpa makes the best hamburgers ever.
00:07 So as per my request, he and I made a cooking video together
00:10 because I know it's unfair for me to talk about delicious American hamburgers
00:14 and not share them with all of you.
00:16 Go off and cook beautiful hamburgers and then thank me for it.
00:20 Also, by the way, my hair is wet because my grandpa was telling me to hurry up
00:23 but I didn't have time to dry my hair okay.
00:25 Okay, here we go.
00:26 Well, we're gonna first start out with, and this is a must, ground buffalo meat.
00:33 Very healthy, very low in fat.
00:37 If you do not want to use this, I would suggest you buy top sirloin ground.
00:43 Do not ever, ever buy ground chuck because it's just bad meat, period.
00:52 First thing my beautiful granddaughter is gonna do is start cooking this stuff.
00:58 You dump everything on the aluminum paper.

01:01 Just dump it.
01:03 What you want to do is you want to just take the meat and separate it.
01:07 We're not mixing it right now.
01:09 Just separate it out.
01:10 Make one long slab out of it actually.

01:14 Now for the seasoning.
01:17 I use no salt.
01:18 You can use real salt if you want to.

01:22 And just-
01:23 No salt is like potassium alternative?

01:26 Just real quick.
01:28 Ground pepper all over.
01:32 And we use a little bit of this, they call it mountain steak sauce.
01:40 Basically what it is, it's a little spicy, just a little bit.
01:44 So you only use a finger full of it.
01:48 So about like that.

01:51 And then you just go.
01:52 Okay.
01:58 Now what we're gonna do, and you don't really need to see the meat, is we're gonna mix it.
02:02 We're just gonna keep folding it over and over.
02:04 Keep it long.
02:05 Okay, so just to recap what we've done.

02:10 We've taken the big slab of meat, the big mushed slab of meat,
02:16 and we've divided them into little, not patties, but just like-
02:22 Little groups.
02:22 Now what we got is we got the 68 pieces.
02:26 All we're gonna do is make patties out of them now.
02:29 Okay.
02:30 There again, the easiest way to do it is you just roll it around like that.
02:35 Spread out your patty.
02:38 And you're done.
02:42 This is almost the simplest food I can think of to make.
02:45 There's nothing more simple than this.
02:47 Now what we started out with was two pounds, as I said, two pounds of buffalo meat.
02:54 Depending on who's eating, if you're just making for two people, one pound is enough.

03:01 Also, what you can do, and I like to do it,
03:04 is you can make more burgers than you're going to use because you can always freeze it.

03:12 There's a fallacy about don't refreeze meat, which it's not a fallacy, it's true.
03:19 But with chopped meat, you can wrap them in cellophane, not wax paper, not aluminum foil,
03:26 wrap them in plastic wrap, put them in the freezer,
03:30 and then the next time you want a hamburger, you got one.
03:32 What is that? That's cheating.
03:35 No, this here, this here is three burgers that were preformed.
03:42 I just wanted to show you the difference.
03:44 Problem with these is they're not seasoned.
03:47 Okay.
03:47 We cook our hamburgers on the griddle on high heat.
03:50 Be sure to oil the griddle as my cousin Lisa demonstrates here.
03:53 When the griddle gets hot enough, you're ready to cook.
03:56 And that's pretty much all there is to it.
04:02 We like our burgers rare, so we cook them for two and a half to three minutes on each side.
04:07 My grandpa advises to not wait until they bubble up as some people do
04:10 because they're too well done at that point.
04:11 When they're done, place a slice of cheese on top.
