00:12 today i m gonna share with you a barbeque recipe
00:18 this is chicken malai boti recipe
00:20 so lets note down the ingredients we need
00:27 for chicken malai boti i have taken 1 kg boneless chicken
00:31 and i have cut it into 1 inch cubes
00:34 1 tbsp ginger garlic paste
00:38 2 to 3 tbsp cream
00:42 but i am telling you this is not the fresh cream you get in the box
00:46 this is milk cream you can use it easily
00:50 1/4 cup yogurt
00:53 this is also 3 tbsp
00:55 2 tbsp lemon juice
00:59 2 tbsp coriander paste
01:04 4 green chilies
01:07 2 stems of green onion,only the top portion of it.
01:16 1 to 1.5 tbsp of it,just make a paste of it with less water.
01:24 1/2 tsp white pepper powder
01:31 1 tsp black pepper powder
01:33 1/2 tsp garam masala powder
01:37 1/4 tsp black salt
01:41 1/2 tbsp salt
01:44 you can adjust it according to your taste.
01:50 2 tbsp raw papaya paste
01:59 now we will marinate all the ingredients and leave it for 4,5 hours.
02:09 so i add raw papaya first
02:13 add lemon juice
02:21 add ginger garlic paste
02:24 mix all the ingredients well in the chicken.
02:38 i will tell you again if you are planning to make chicken malai boti in oven or skewers then take 1.5 inch pieces of chicken.
02:50 i will show you how big pieces i have taken in the pan,but i will also show you in the skewers.
02:57 add all the spices
03:00 white and black pepper
03:03 salt,black salt and garam masala
03:07 mix all the ingredients well and add green chutney in it.do not add more green coriander in it.
03:18 because the chicken malai boti will be green in colour and it will not be original.
03:28 add cream in it.
03:32 add yogurt in it.
03:39 mix all the ingredients well.
03:48 cover and keep it in fridge for 4,5 hours to marinate.
03:57 and then you can bake it in the oven or skewers and shallow fry it.
04:06 you can also roast it in the pan or you can cook it on the coal.
04:15 you can cook it in any way you like.
04:21 i mix all the ingredients well.
04:27 cover and keep it in fridge.
04:29 its been 6,7 hours now
04:38 now i add 2 tbsp butter in it.
04:46 i mix it now,i did not do it at that time.
04:49 mix it when you are ready to cook it.
04:54 mix it well.
05:00 if you are cooking it in a pot then you can skip it.
05:05 but if you are cooking it on skewers then you can add butter or ghee or oil in it.
05:14 because it has cream in it,so you need not add ghee.

05:23 i am going to put some of it on skewers and i will show you how to fry it in a pan.

05:33 i have small skewers so i am using 2 skewers.
05:46 leave some space in between and do not put it all at once.

05:56 put it in the pan.

06:21 i will cook the rest in a same way.

06:33 i heat 2,3 tbsp oil in a frying pan.
06:42 put the skewers in it.
06:48 fry it on medium to low flame.
06:57 because we do not want to fry it on high flame.
07:04 the chicken is so soft and tender that it will take only 5,7 minutes to cook.
07:14 so we cook it from one side for 1,1,5 minutes and then turn it and cook it from all sides till it gets completely cooked.
07:30 in another pan put 2 tbsp butter and melt it.
07:50 put the chicken in it and cook it on medium flame till the water dries up.
08:07 it will take 5,7 minutes to cook.
08:13 now we will cook the other side.
08:24 we will cook it from all sides till it gets golden color.
08:42 i cook it on full flame because it is boneless and tender.
08:57 the more the water evaporates the more it will be soft and juicy.
09:03 so i turn off the stove and let it cook for 5,7 minutes.
09:16 look at the color,it is so beautiful and golden.
09:21 it will have a barbeque effect.
09:27 now we will cook the other side for 5,7 minutes.
09:40 so the malai boti is ready now.
09:50 the oil is separated.
09:54 now i will place the skewers on the pan.
10:02 i will tell you why i am placing it on the pan.
10:04 because i have a coal on the other stove to burn it.
10:15 i have a bowl of foil here.
10:22 and i will put the coal in it.
10:30 and 2,3 drops of oil in it.
10:37 and i will cover it immediately so the coal will burn.
10:51 so our chicken malai boti is ready on skewers.
10:58 and i will show you how it looks.
11:05 it is served with paratha,salad and onion.
11:12 you can serve it with curry leaves chutney and turmeric.
11:18 it is specially for this type of barbeque.
