00:08 Welcome to Rizwanah's Cooking.
00:10 Today, I am sharing a Bengali Rasgulla recipe.
00:19 The best thing about this sweet is that it has very few ingredients.
00:24 You can make delicious Rasgullas with very few ingredients.
00:28 There are some techniques while making this sweet.
00:32 If you follow them, you will make perfect Rasgullas.
00:36 For Rasgulla, we need 2 litre whole milk, 4 cups sugar, 1.5 litre water, 4 tbsp white vinegar, 8 pieces cardamom, few drops of kewra.
01:01 To make Rasgulla, first boil the milk.
01:06 After boiling the milk, add vinegar.
01:11 After adding vinegar, you will see that the milk will start curdling.
01:18 Do not stir the milk too much.
01:22 Stir the milk very gently.
01:28 After this, put the milk in a strainer or colander and drain the milk.
01:37 Immediately, we have to drain the milk.
01:40 Take a cheese cloth or tea towel and drain the milk.
01:49 Immediately, separate the milk from the hot water.
01:54 Add very cold water to cool the milk.
02:00 This will not only cool the milk, but also remove the taste of vinegar.
02:07 Your cheese will not be hard and Rasgullas will be very tasty.
02:19 Now, hold the cloth from all sides and make a bag.
02:25 Squeeze the cloth to remove the excess water.
02:37 Leave it for 30 minutes or leave it on the strainer.
02:52 Our cheese is ready.
02:56 This is cottage cheese.
03:01 It is not too dry and is very moist.
03:07 Now, knead the cheese with your hands.
03:13 Knead the cheese for 4 to 5 minutes.
03:21 The cheese will be soft like a dough.
03:25 Now, portion the cheese according to your desire.
03:35 If you want to make small Rasgullas, make small portions.
03:40 If you want to make big Rasgullas, make big portions.
03:45 Press the cheese with your hands and make round balls.
04:02 To make light syrup, add half sugar to the water and add remaining sugar to the syrup.
04:28 As soon as the syrup boils, add cheese balls.
04:43 Cover the cheese balls with the lid.
05:00 Make regular sized Rasgullas.
05:29 Let the Rasgullas cook for 3 to 4 minutes.
05:33 Then, take them out of the syrup.
05:39 Add remaining sugar to the syrup.
05:43 Add 4 to 5 green cardamom and few drops of kewra or rose water.
05:50 Make thick syrup.
05:54 Let the Rasgullas cook for 2 to 3 hours.
05:59 Now, the delicious and spongy Rasgullas are ready.
06:04 I am garnishing them with pistachio.
