00:07 Today I am going to make Kadhi which is made with Pakoras.
00:14 It is a very simple recipe.
00:16 So let's start making it and see the ingredients we need.
00:21 Ingredients required to make Pakoras are
00:27 1.5 cup Besan (Gram Flour)
00:29 1 tbsp Oil
00:31 1 Onion, chopped
00:33 3 Green Chillies, chopped
00:37 1 pinch Baking Soda
00:39 1 tsp Salt
00:41 1/2 tsp Cumin Seeds
00:43 1/4 tsp Turmeric
00:45 1/2 tsp Red Chilli Powder
00:49 1/2 tsp Crushed Red Chilli
00:51 We will need some water.
00:57 To make batter, add all the spices in a bowl.
01:05 Add Baking Soda.
01:10 Mix it well.
01:13 Add water little by little and mix it well.
01:31 Add chopped Onions.
01:35 Add chopped Green Chillies.
01:39 Batter is ready.
01:43 Keep it aside.
01:45 To make Kadhi, we need Besan.
01:47 6 tbsp Besan.
01:49 For Masala, we need
01:51 1 tsp Red Chilli Powder
01:53 1 pinch Asafoetida
01:55 1 tsp Salt
01:59 1.5 tsp Turmeric Powder
02:02 1/2 tsp Mustard Seeds
02:04 1/2 tsp Cumin Seeds
02:07 2 Green Chillies, chopped
02:11 1 tbsp Dry Red Chillies
02:14 1 tbsp Curry Leaves
02:17 1 Onion, chopped
02:20 1 tbsp Garlic, crushed
02:24 To make Kadhi, we usually use Yogurt.
02:27 But I am using Buttermilk.
02:32 Buttermilk is sour and tastes good.
02:37 Take 1/2 litre Buttermilk.
02:40 Add 1/2 cup Oil.
02:43 First, we will make Pakoras.
02:46 Heat the Oil.
02:48 But it should not be too hot.
02:50 If the Oil is too hot, Pakoras will turn brown and will be raw.
02:56 Fry Pakoras in the Oil.
03:02 Do not over fry or brown them.
03:12 Flip them often.
03:18 Keep flipping them.
03:20 So that they will be cooked and not over fried.
03:23 Always make Pakoras on medium heat.
03:26 But do not use too much cold Oil.
03:29 So that Pakoras will not puff up.
03:32 Pakoras are ready.
03:34 Take them out.
03:36 To make Kadhi, first we will mix the Gram Flour.
03:43 Add a little Buttermilk.
03:47 And mix it.
03:49 Add Garlic.
04:01 Oil is hot.
04:05 Now we will start cooking.
04:07 Add Mustard Seeds.
04:11 Add Cumin Seeds.
04:13 Add Red Chilli.
04:15 Add Onion.
04:19 Add all the spices.
04:25 Add Red Chilli Powder.
04:28 Add Turmeric Powder.
04:30 Add Asafoetida.
04:33 But do not add Salt yet.
04:41 Add Gram Flour and Buttermilk.
04:45 After adding Gram Flour, fry it well.
04:51 So that the raw taste of Gram Flour is gone.
04:53 Then add 4 cup of Water and cook it.
04:59 Add Salt.
05:15 Usually Kadhi is time consuming.
05:22 It is cooked for 2 to 3 hours.
05:26 But the Kadhi we are making today, will be ready in 45 minutes.
05:34 Now it is almost ready.
05:36 Add Pakoras.
05:40 Add Green Chillies.
05:46 Mix it.
05:50 Let it cook for 10 minutes on low flame.
06:00 Kadhi is ready.
06:02 I will dish out it.
06:04 Delicious Kadhi is ready.
06:06 You can have it with Rotis or Rice.
