00:10 today i m sharing with you chicken karahi dhaba style
00:15 this chicken karahi is totally different from the one we make at home
00:21 this recipe is the same we make at road side restaurants
00:28 the karahi we get there is the same recipe we make at home
00:32 so we need 750 gm chicken,you can ask for karahi cut,buchar will give you the cut
00:42 for 750 gm chicken i have taken 400 gm red tomatoes,they are ripe but little hard
00:53 for spices we need 1 tsp salt,you can adjust it as per your taste
01:03 1/2 tsp turmeric powder
01:08 1 tbsp coriander powder
01:12 1 tbsp red chilli powder
01:18 1 tsp cumin powder
01:22 1 tbsp cumin seeds
01:28 1/2 tsp black pepper crushed
01:36 1 tbsp garlic paste
01:41 1 inch ginger,shredded
01:49 1 tbsp dry fenugreek leaves
02:06 4 green chillies chopped
02:14 3 green chillies,2 green and 1 red for garnishing
02:19 1/4 bunch coriander
02:22 1/2 cup yogurt
02:26 1 cup oil
02:30 i heat the oil in the pan
02:35 add chicken and fry it on medium flame for 2,3 minutes.
02:44 chicken is fried now.
03:12 chicken is changed in colour.so i will put it in a plate and in the same oil i will add spices.
03:20 add tomatoes in it.
03:23 cook it until tomatoes are soft and mushy.
03:38 i cook it on high flame for 2,3 minutes.
03:44 tomatoes will release their water and cook in it.
03:49 then i will add spices in it.
03:52 i will show you after 2,3 minutes.
04:12 tomatoes are soft now.
04:17 we have peeled the skin of the tomatoes and cut them in round shape.this is the best way to cook tomatoes.
04:33 peel the skin of tomatoes and keep them in the water for 2,3 minutes.
04:48 tomatoes are cooked now.oil is coming out from the sides.
04:52 now i will add spices in it.
04:55 i will write the measurements in the description.so you can check it on the paper.
05:18 i add all the spices in the water.
05:26 add cumin seeds.
05:29 mix it.
05:43 now i will add chicken in it.
05:48 add garlic paste in it.
05:56 add chopped ginger.
06:12 now cook it with garlic and ginger.
06:18 i did not add ginger and garlic paste in it because i want to cook it with garlic and ginger.
06:28 chicken is cooked now.
06:38 now i will add yogurt in it.
06:43 i did not slow down the flame of the stove.i just cooked the tomatoes on medium flame.
06:58 i do not use onions in dhaba style kadhai.we use onions in the kadhai which we use for grinding or for fine chopping.
07:11 we want to keep more gravy in the kadhai so we add onions in it.
07:20 you can see the gravy is so thick in it.it is dhaba style kadhai.
07:27 add ginger.
07:32 add black pepper.
07:38 add dry fenugreek leaves.
07:50 mix it.
07:52 now our chicken is ready to cook.if you want to cook it in a pressure cooker add 1/2 glass of water in it.i will check it in it. if it needs more water i will add more water.
08:18 i will check it in it if the chicken is cooked or not.
08:26 cover the lid and cook it on medium to low flame till the chicken is cooked.
08:39 now i will add green chillies in it.i washed them and cut the seeds and washed them again.
08:57 i am telling this tip for those who like less spicy food.they can easily cook green chillies without the seeds and can reduce the heat of the chillies.
09:10 chicken kadhai is ready now.
09:13 water is dried and oil is on the top.you can see there is no water in it.
09:26 now i will add coriander in it.
09:31 tasty dhaba style chicken kadhai is ready.
09:35 it is very tasty.
