00:16 Fried chicken is one of life's guilty pleasures, but I can bet you've never had anything as tasty as this Nashville version.
00:22 Beautifully moist chicken in a crisp coating with a fiery chilli oil glaze.
00:27 So I've got my chicken here which has been jointed and then cut into eight equal portions and it's been dry brined overnight.
00:33 Basically what that means is you salt and pepper the chicken, cover it and pop it in the fridge overnight.
00:38 Some of the moisture will start to draw out of the chicken and then it will suck it back up again plus the flavour of that salt and pepper.
00:44 So you'll end up with really moist, well seasoned chicken.
00:47 So for the coating I've got some buttermilk here and to that I'm going to add a couple of eggs.
00:51 Just whisk them together until they're smooth and then add some Tabasco.
00:54 This works so well in this dish. It's not as fiery as people think and it's got that fantastic depth of flavour from all the peppers
01:01 and a great kick of vinegar which works brilliantly against the chicken.
01:05 So that's my wet mixture ready.
01:08 And then I've got some plain flour here which I'm just going to add a generous bit of salt and pepper.
01:17 So take your chicken pieces and I'm going to go flour, shake off any excess and then into the buttermilk.
01:26 Now try and keep one dry hand and one wet hand otherwise you're going to end up with really big gloopy sticky fingers.
01:32 And then into the flour.
01:35 It's really important you fry in batches so that you don't overcrowd the fryer.
01:38 Otherwise it's going to stick together, you're going to reduce the temperature of the oil and it's just going to go really flabby and pale.
01:46 When you're putting the chicken into the fryer or to be honest anything that's got a crispy coating or a batter,
01:50 add it in really gently and just wave it slightly into the oil.
01:53 What will happen is that first bit of contact with the oil will start to crisp up and then it won't stick to the bottom of the fryer or to the basket.
02:01 Quick wash of my hands.
02:04 Now while the chicken's cooking I can make the spicy oil.
02:07 So I've got some olive oil in a jar and to that I'm going to add some cayenne pepper, some soft brown sugar,
02:11 some dried garlic granules, a bit of paprika and some salt and pepper.
02:15 Put the lid on tightly and give it a really good shake.
02:26 So these have had about ten minutes now and they look perfect.
02:31 Really carefully take them out and put them onto a wire rack or set over a tray with some kitchen paper.
02:48 So once the chicken's drained just take this delicious oil and just brush it over the top.
02:59 They look fantastic.
03:01 So if you look at that, perfectly cooked, really, really moist.
03:05 And there you have it, my spicy fried chicken.
03:07 I know it's a little bit of a guilty pleasure but if it looks as good as this, who can resist?
