00:57for this St. Patrick's Day cooking show.

01:04Yes, we've had a lot of-
01:05Your kitchen looks beautiful now.
01:07We've had a lot of fun.
01:08We've done a number of shows together.
01:10We did Valentine's Day, we did Thanksgiving,
01:12and now we are doing a St. Patrick's Day show.
01:16So, Rosia, what do we have in store for today?
01:19Okay, so we're gonna work on a chocolate
01:22Irish cream cake and cupcakes.
01:24We're gonna decorate both.
01:26And probably we can have some coffee
01:28that you can show us also.
01:29Yes, we're gonna do some Irish coffee.
01:33And we are gonna have a little spike
01:36in both the cakes and the cupcakes and the Irish coffee.
01:41So why don't we get started with our ingredients
01:44and with making the batter?
01:47Okay, so it's very easy.
01:50We actually need the mixer for it,
01:52our whip cream for the coffee,
01:54but for the cake, super easy.
01:57We're just gonna do our flour.
01:58I already measured everything.
02:00The measurements are right here,
02:02or they can also be in the description.
02:06Yes, and at the end of the show,
02:08we will have the ingredients.
02:09So anyone that wants to follow along
02:11and create it at home, you'll have it available to you.
02:15So we're gonna do dry ingredients first.
02:18So flour, sugar, our cocoa powder.
02:24Mm, that smells good.
02:25The apple powder is good.
02:27Yes.
02:28Salt, baking powder, and baking soda.
02:34And we're just gonna mix this.
02:37Okay.
02:40Just to incorporate in there.
02:46That's perfect.
02:49And then we have the wet ingredients.
02:53I'm just gonna break the egg.
02:56Just give it a little bit of mix.
02:59And then we have the oil.
03:03Great.
03:08And we're gonna add the vanilla,
03:11just to give it a little bit of flavor.
03:12Yeah, how much of the vanilla?
03:13Just one teaspoon.
03:14Okay.
03:17Great.
03:17In here.
03:20And then we are going to do our milk
03:25and a little bit of the Irish cream.
03:30St. Patrick's liqueur.
03:32Yes.
03:33Yes.
03:39Okay, for this, we only need a quarter cup.
03:48Mm, that smells good.
03:49So my little spiked cake batter.
03:53So the alcohol part will be evaporating while it's baking,
03:58so kids can have it.
03:59That's why we're making the cupcakes as well.

04:02Everything is edible for them.

04:06And then we're just gonna mix all together.
04:10And that's it.
04:11That's it, that's our batter.
04:13Mm-hmm.
04:15So I will bring over the cake pans and the cupcakes.

04:24One cup of coffee.
04:25So after I'll mix all these dry ingredients
04:27and wet ingredients.

04:29We are gonna need one cup of hot coffee,
04:32and that's gonna bring up the flavor.

05:04What a great combination.
05:05We've got chocolate, we've got coffee,
05:08and we've got-
05:09And the Irish cream.
05:10And Irish cream liqueur.
05:11Can't beat that.
05:14That's awesome.
05:15So the coffee's gonna make the chocolate cake
05:19bring up the flavor.
05:20It's gonna be more chocolately.
05:24Okay.
05:25You're not really gonna feel the coffee flavor in it.

05:31Well, it's so much fun.
05:32St. Patrick's Day is a time of joy for everyone.
05:36It's a world holiday where everyone just loves to have fun.
05:41It inspires all of us to go green.
05:44And certainly liqueur is part of the festivities,
05:50which we all enjoy.
05:55All right.
05:56So now we can bring up the cake pans and the cupcake pans.
06:01Okay.
06:04Here we go.
06:06So the cake pans are already floured and oiled
06:10and put the parchment paper on the bottom.
06:19And you fill it up about how far?
06:23We're gonna do for this one just halfway.
06:25Okay.
06:30It depends on how many cake pans you have
06:33and how long you wanna wait in the oven
06:37because the more batter it has,
06:38the longer it's gonna take baking in the oven.
06:42We can use this for the cupcake batter
06:45if you can bring it here.
06:45Sure.
06:50There we go.
06:51Beautiful.
06:53Great.
06:54And super easy.
06:56Just with this kind of ice cream scoop.
07:01And we're just gonna put it in there.
07:05So usually I do like one and a half
07:07per cupcake.
07:10Okay.
07:12And these were what?
07:13Five or six inch?
07:15That's a six inches cake pan.
07:17Okay.
07:19And, or if you don't wanna do like one and a half,
07:22just one and a quarter by nine,
07:25we do three fourths of the mold.
07:30Okay.
07:31So you don't wanna fill it all the way to the top
07:33because it's gonna overflow while baking.
07:35And we're gonna decorate.
07:36Yes.
07:38So we need room to put some of the fun candy
07:42and marshmallows on top.
07:50Okay.
07:51Beautiful.
07:52And whatever is left,
07:53we can just refill our molds.

09:03So the timing for baking the cupcakes
09:06and the cakes are gonna be a little bit different.

09:09So it usually takes about 20 minutes
09:11or 25 for the cupcakes.
09:13You always can check it out.
09:16And then for the cake,
09:17it's gonna be a little bit longer, 35, 40 minutes.
09:20Okay.
09:21Super.
09:22So we can put our whipped cream here.
09:26So we're gonna start doing that.
09:28Great.
09:29And so we can start with our Irish coffee.
09:33Yes, you can of course have to make the coffee.
09:36Okay.
09:37We got some Jameson.
09:38That's always fun.
09:40And while Rocio is making the whipped cream,
09:45we do have four ingredients that is going into the coffee.
09:50Of course we have,
09:51we will have our coffee.
09:52We're gonna have a little brown sugar.
09:55We're gonna have about an ounce each of Jameson.
10:00And then we're gonna top it off with our whipped cream.
10:03So let's do it.
10:07I'm ready.
10:08Mm-hmm.
10:26We're gonna start also making our fondant decorations
10:30for the cupcakes.
10:31So once they come out,
10:32we have the decorations ready to decorate the cupcakes.
10:35Perfect.
10:37And then put in our brown sugar.
10:46Two teaspoons each.
10:55And then I'm going to add about an ounce of Jameson
11:00into each coffee cup.
11:07Okay.

11:30Mix it a little bit together.

11:38What's the impact of today without Irish coffee?
11:45Oh, yeah.
11:47Yes.

11:52Whipped cream's almost ready.

11:59And we're just gonna use a piping tip that is a star.
12:02So it doesn't break the coffee when you whip cream.
12:08Okay.
12:11For the bag, you can fold it like that.
12:14You make a cup with your hand.
12:16Okay.
12:17Or if you can use one hand to refill it,
12:19you can always put it on a full cup,
12:22put it in there,
12:24and then you can use both hands to refill the bag.

12:46I do have something special to show you.
12:53Try to get it all the way down
12:54so this way it doesn't fill up with air.

12:58Because otherwise, if you get air in it,
13:01once you're piping out of,
13:04it's gonna come out air.
13:07It's gonna have some air bubbles in there.
13:09And it's just gonna explode.

13:27And then you just lift it up, the bag.

14:40And we're gonna start with the decorations for the cupcakes.
14:44So the cupcakes are gonna be like a rainbow,
14:47and then we're gonna put some clouds
14:49on the sides of the rainbows,
14:51and we're gonna use the pot of gold.
14:53So what I did here, this is an edible sheet, sugar sheet,
14:57and it's edible ink as well.
14:59So I just print it out,
15:02and we're gonna cut it out.
15:06It comes with a plastic backing.
15:10That's how it prints out.
15:12Now we just cut out a round.
15:14Okay.
15:16And this is gonna go on top of?
15:18Of a piece of fondant.
15:20Okay.
15:21Because we wanna make everything edible
15:22for the cupcakes for the kids,
15:24so there's not gonna have any cardboard
15:29or any printed materials that they cannot eat.
15:33Great.
15:34And tell us what fondant is, actually.
15:37Fondant is a sugar paste.
15:40And so everybody can eat it.
15:44It's really sweet, kinda gooey.
15:48And you can make it out of,
15:49it's primarily sugar, correct?
15:52With flavoring.
15:53Yeah, so if you wanna make it from scratch,
15:56it's basically melted marshmallows and powdered sugar.
16:00Okay.
16:00And I did read somewhere that you can actually
16:02just make a marshmallow fondant as well.
16:07So it's kinda cool, especially if you love marshmallows.
16:09We do have some marshmallows here,
16:11and we are gonna be adding that as part of our decoration.
16:15So we have the fondant right here.
16:21You can use any color.
16:22We're just using green, so it goes with the theme here.
16:27But you can use any color,
16:28because we are gonna glue our edible paper on it.
16:35And then we're gonna cut it around.
16:37So we're just gonna use an edible glue.
16:39This is called piping gel,
16:41which is also made out of sugar.
16:44With a little bit of brush, put it in the back.
16:49This is a combination of art and cooking class.
16:53Yeah, and then we just put it on the fondant.
16:57That's it, so simple.
16:57And a pot of gold.
16:58And everything is edible, yes, for the kids.
17:03It's for the luck of the Irish.
17:04We got the shamrock, and we got a pot of gold.
17:08Perfect.
17:09And then the only thing that is left is just cut around.
17:14You can do it with a knife, with a X-Acto knife.
17:18Anything that you have on hand.
17:21And that's it.
17:22So everything is edible for the kids.
17:24There is no paper or any sticks that we're gonna put on.
17:30Sometimes you get those cupcake toppers,
17:33and it's not edible, and they got a stick on it,
17:35so this is safer for them.
17:43And it says we're doing this for the cupcake.
17:45How much time, Rocio, would you say does it take
17:48to create this, the...
17:52All depend on what's the design that we're working on.
17:56This one itself is not that difficult.
17:59So we just print out the design that you want.
18:03In this case, we're doing the clover leaves for the cake,
18:07and then we're doing the pot of gold for the cupcakes.
18:10You just print it out, and that's it.
18:12You start making it like we're doing it right now.
18:15Perfect.
18:15So, yeah, and same thing for the clover leaves.
18:19So we're gonna cut it out.
18:21We're gonna glue it on the fondant,
18:24and then we're gonna cut it around with the knife,
18:26and then just leave it to dry a little bit.
18:28So when you leave it to dry, it depends on how you dry it.
18:32So in this case, we're using this plastic.
18:37It was for the egg covers that comes with it.
18:40I just save it, and it's really good.
18:42So if you see, it's a little bit vented on the leaves,
18:46so it has some shape.
18:48Yeah, it'll give it a nice dimension
18:49once we put it on the cupcakes and the cake.
18:52Yes. Yes.
18:54And then we do all of it, you know,
18:58we put it aside, we let it dry for a little bit,
19:02because if it's still too soft, the fondant is not,
19:06it's still, you know, bendable.
19:08Okay.
19:09So I made a couple before.
19:10This one's already dry,
19:12and this one has like a little shape to it.
19:15Yeah, very nice.
19:17Yeah, feels good.
19:18Great.

19:22So.
19:23All right, I think we're ready to-

19:27to take the cupcakes out of the oven?

20:04So the cupcakes are done before the cake,
20:08so we're going to start decorating our cupcakes.

20:19And then we're going to use buttercream.
20:22So I have already buttercream made.
20:24Mm-hmm, okay.
20:25And I already colored my buttercream.
20:28Let me see if I can get it all out.
20:31Green buttercream.
20:32Yes, so it goes, everything is green today.
20:36And what are the ingredients
20:37that went into making the buttercream?
20:40For the buttercream, it's only powdered sugar
20:44and butter, a little bit of milk.
20:48If you are allergic to milk,
20:49you can use any alternative for butter
20:54or water instead of milk.
20:56And then just flavoring.
21:00So you can flavor, actually,
21:01your buttercream the way you want it.
21:03Okay, sure.
21:04Today, I just used vanilla for flavoring,
21:06but you can, since, you know,
21:08I shouldn't use some Irish cream.
21:10Right, of course.
21:12But by the time we're done eating and drinking,
21:16we're certainly going to have a little...
21:19But that's not a real parade
21:21because it's not going into the oven.
21:22So if we're going to serve to the kids,
21:24you know, let's flavor it with something else.
21:26Okay.
21:30So we're going to use the same thing.
21:32Our piping bag is already put on a little tip.
21:35Mm-hmm.
21:36We fill it like a cup.
21:39And we're just going to fill it.
21:41Beautiful.

21:47I don't know if you remember,
21:48last time that we made the cupcakes,
21:51so you can frost those.
21:54And then I'll make some here.
