00:00 Hey everyone, welcome back to Keep Calm and Bake.
00:04 I'm Caroline and I teach people how to cook on YouTube.
00:08 Now this week's recipe is how to make an Oreo cake.
00:20 We're going to start by making the chocolate cake.
00:23 Now there is a whole list of ingredients, but don't worry, we've put them all in the
00:28 description box for your convenience.
00:30 Very good.
00:31 Now I'm just going to start by popping everything into my blender.
00:35 So just follow the order that they go in and you'll be good.
00:39 So three eggs, oil, and lots of sugar.
00:54 Vanilla.
01:01 Mix these together first.
01:07 Alright, that is done.
01:13 So just beat it really well together.
01:16 Now we're going to sieve the dry ingredients together.
01:19 So flour is going to go in, cocoa powder, baking powder, and then bicarbonate of soda.
01:34 And these ingredients just help everything rise.
01:39 Pinch of salt.
01:43 Sieve these all together.
01:47 Sieving everything together just means that you're incorporating air and also you are
01:52 blending all the ingredients together as well.
01:54 So they're kind of mixing as you go along.
01:57 Which is good.
01:59 Got a cloud of flour.
02:02 We're going to start adding the dry ingredients and the rest of the ingredients into the eggs
02:06 and sugar.
02:07 I'm going to pop this back on on a slow speed and then add as we go along.
02:13 Spoon of that.
02:22 Now the buttermilk.
02:27 I'm alternating the flour and buttermilk.
02:30 So a bit of flour, a bit of buttermilk.
02:36 There we go.
02:38 Keep going until everything is mixed together.
02:44 I'm going to add in half a cup of coffee.
02:47 So this just helps to give the cake a really nice extra flavor and makes it very moist.
02:56 Last bit of flour going in.
03:04 Rice at the end.
03:05 Just beat everything together until it's nice and smooth.
03:09 Right, that is perfect.
03:16 Mixed together.
03:17 Now this is quite a runny batter as you can see but that's fine.
03:22 It comes out beautifully.
03:25 Now scrape down any bits on the side.
03:27 Make sure everything is mixed in together.
03:32 Now pour your mixture into your prepared cake tins.
03:37 You make sure your oven is preheated as well.
03:40 That's very important.
03:42 Right, done.
03:46 This just now needs to go into the oven for about 30-35 minutes until it is cooked all
03:51 the way through.
03:52 Pop these straight in.
03:58 Once your cakes have cooked, leave them to cool on a wire rack and then you can get on
04:03 and make your Oreo icing.
04:07 This is where the Oreos are coming in.
04:09 So to make the icing you need some unsalted butter at room temperature.
04:15 I'm going to use a mixer to do this because it's going to save my arms.
04:19 I'm going to sift the icing sugar into the butter.
04:22 I'm going to start by doing half of it.
04:25 I'll do half of it to begin with.
04:27 We'll put half in in a bit.
04:32 Okay let's mix these together first.
04:37 Start doing it very slowly otherwise it's going to go everywhere.
04:43 Right, very slow.
04:46 Once the first lot of icing sugar has been well mixed into the butter then you can start
04:51 adding more.
04:52 I'm going to add the next bit.
05:00 In it goes.
05:08 Drop of vanilla.
05:10 When you can see it's becoming lovely and fluffy I'm going to add about two tablespoons
05:14 of cream.
05:15 This is going to just help lighten up the whole icing so it's not too thick.
05:28 Now beat this all really well together.
05:30 That is done.
05:33 Hooray.
05:34 That's lovely.
05:35 Now if it is a little bit firm just add a touch more cream.
05:38 Whip it up again it'll be fine.
05:40 What I'm going to do is I'm going to actually smash half of them and then save the other
05:45 half for decorating.
05:50 Half of them into a food bag.
05:59 This is the easiest way to smash them up.
06:02 Pop them all into a bag.
06:06 And now give them a gentle, well not so gentle, smash.
06:11 I don't want it pulverized.
06:17 I still want a little bit of chunk in there.
06:20 We have crumbled little pieces of Oreo goodness.
06:23 We're going to separate the icing.
06:25 Put half of it into another bowl.
06:29 Keep half in there.
06:35 Put your crushed Oreos into half of the icing mixture.
06:42 Mix that all together.
06:43 This is good.
06:44 See I get excited when I bake.
06:52 Let's put this baby together.
07:00 Cake is nice and cool.
07:02 The icing with the Oreo bits in, they go in the middle of the cake.
07:07 I'm not going to ice the outside of this cake because I want it to look like an Oreo as
07:11 well.
07:12 As well as taste like an Oreo.
07:16 Make sure you get all the way to the edges.
07:21 Other piece of cake on top.
07:27 The plain icing goes on the top part.
07:34 Smooth this bit just over the top.
