00:06 It's three layers of homemade Funfetti cake and vanilla buttercream frosting
00:09 that's completely encrusted with rainbow sprinkles.

00:14 We're calling it the Funfetti Sprinkle Party Cake.
00:17 Preheat oven to 350 degrees, then grease and flour three 8-inch cake pans.
00:22 Separate eggs.
00:24 Here's a tip.
00:25 Separate eggs when they are cold.
00:27 Beat egg whites when they have come to room temperature.
00:31 Add egg whites and cream of tartar to mixing bowl and beat until stiff peaks are formed.

00:45 Be sure not to over whip the eggs.
00:47 Dry egg whites will create a dense cake.
00:50 Reserve beaten egg whites.
00:53 Cream butter and shorten until smooth and uniform.
01:06 Add sugar gradually and beat until very light and fluffy, about three minutes.
01:18 Add egg yolks one at a time until incorporated.

02:01 Remove mixer paddle and fold in beaten egg whites and sprinkles by hand.
02:05 Start by folding in one third of the egg whites, then the second third, the sprinkles, and the last third of egg whites.
02:21 Bake at 350 degrees for 25 to 30 minutes.
02:24 Carefully remove cakes from oven and allow them to cool on a baking rack for 10 to 15 minutes.
02:29 You'll know the cakes have cooled when they pull away from the sides of the pan.
02:32 Run a knife around the edge of the pan and invert to remove cake.
02:35 Place first layer on an 8-inch round cake board and add a generous amount of your favorite buttercream frosting.
02:41 Repeat with the second layer.
02:48 Invert the third layer so the bottom of the cake is facing up and apply a thin layer of frosting to seal in the crumbs.
02:54 The sides of the cake are where most of the crumbs and uneven crevices will be.

02:58 Frosting fixes everything.
03:00 Apply a generous amount to the side of the cake, pressing the frosting into any crevices with the offset spatula.
03:06 Smooth out the frosting until only a thin layer remains.
03:09 Remove the excess frosting from offset spatula by dipping into a bowl of hot water and wipe with a kitchen towel.
03:15 This technique not only helps to clean the spatula, but the warm spatula helps smooth out the frosting.
03:20 This is the fun part.
03:22 Line a rimmed cookie sheet with parchment paper and empty three to four containers of rainbow sprinkles until the cookie sheet is well covered.
03:28 Shake the cookie sheet so there's an even layer.
03:31 Next, place an 8-inch cake board on top of the cake and get ready to roll.
03:35 Pick up the cake with one hand on top and one hand underneath.
03:38 Turn the cake on its side and roll in the sprinkles.
03:43 Once all the sides are coated in sprinkles, invert a small bowl in the center of the cookie sheet and place the cake on top.
03:49 Remove the cake board from the top of the cake.
03:52 Apply a thin layer of frosting and cover with sprinkles.
03:57 P.S. You can cover the entire cake this way if you don't feel like rolling with it.
04:02 If there are any bare patches on the side of the cake, take a handful of sprinkles and press.
04:07 Transfer to a cake plate or stand.
