00:00 In this step of our black forest cake, we're going to be making our ganache frosting.
00:04 I've already got the cream heated on the stove to come to a nice boil, and we're now going
00:10 to take it over to our chocolate and gently pour it over.
00:16 And now we want to continue to whisk and make it a very nice and smooth consistency.
00:22 And with the ganache, as most ganache recipes, there's many of them out there, it's best
00:27 to make it a day ahead of time and let it set up overnight.
00:31 You can also use a chocolate buttercream frosting or whatever kind of flavor you prefer.
00:36 I like the chocolate ganache myself.
00:57 In this segment, we're going to make our cherry filling for our black forest cake.
01:01 You're going to need your saucepan from earlier, and we have cherries, sugar, cornstarch, and
01:07 water.
01:08 In this first step, we're going to take our saucepan and cherries over to the stove and
01:13 turn it on to a low heat, not to burn the cherries.
01:17 And we're going to also add in our water, which is going to help produce that kind of
01:23 jelly consistency that ends up in the cherry filling.
01:27 While this is slowly coming to a boil and cooking, we're going to combine our dry ingredients.
01:32 So we're going to take our half a cup of sugar into a larger bowl with a quarter cup of cornstarch,
01:39 which is going to be our thickening agent.
01:41 And we want to whisk these two together so that there's no lumps of cornstarch, thus
01:46 no lumps in your cherry filling.
01:58 In the second step of the cherry filling, we're now going to combine our cornstarch
02:01 and sugar mixture with our hot cherry mixture on the stove.
02:05 So making sure that everything's nice and hot, you just add in, while stirring, your
02:12 powder mixture.
02:15 And then you'll just keep cooking it, keep stirring it to not burn the bottom until it
02:20 becomes a nice clear red mixture.
02:23 The white cornstarch will disappear once it's cooked up.
02:27 And I'm making a filling, but you can also buy pre-bought cherry filling.
02:31 Some people also just use straight cherries and not make a filling with it.
02:34 So whatever your preference is, any option will work.
02:43 And it's starting to thicken up, and it'll start to get a little bit clearer as it gets
02:47 to the finishing stages.
02:55 In this first step of our decorating and assembly of our black forest cake, we're now going
02:59 to get started.
03:00 We have our chocolate cake, and you can use any chocolate cake recipe that you're comfortable
03:04 with.
03:05 Box cake, grandma's recipe, whatever you want.
03:08 So we're going to take the cake and cut it in half, being careful not to cut your fingers
03:13 in this process with a nice serrated knife.
03:17 When we flip it over, we take our rum syrup from earlier and just do a nice drizzle on
03:24 the whole cake to create that moisture and flavor, both the top layer and the bottom
03:30 layer.
03:34 And then we're going to take our ganache into our bag with the small star tip.
03:39 We're going to be creating a border to keep the whipped cream that's going on the middle
03:43 of the cake from pushing out the sides.
03:46 So we take our ganache and just do a nice couple of rows of the ganache to build it
04:00 up a little bit, kind of creating a dam, if you will.
04:04 Take our whipped cream from earlier, a few nice dollops right in the middle.
04:09 You can just use the regular spatula to kind of smooth it out.
04:12 It doesn't have to be perfect.
04:15 And then what we're going to do now is take some of the cherry filling and just put a
04:18 few little dollops inside.
04:20 We're not covering the whole thing.
04:21 Most of the cherry is going to go on the top of the cake.
04:25 This is just to kind of add in some flavor inside as well.
04:30 Now that we have some cherries inside, you return the top half of the cake back on there
04:38 and we'll leave it as this sets in the fridge for a few minutes just to kind of harden up
04:42 the ganache and keep it from making a mess when we do the final decoration.
04:48 In the second step of finishing our Black Forest cake, we're going to take the cake
04:52 from the fridge where we've let it set up and we're going to do all the finishing process.
04:56 So we're going to take our ganache with our frosting spatula and we're going to go ahead
05:02 and do a nice border along the sides.
05:05 There's no need to worry about the top.
05:07 We're going to be covering it with the cherry filling from earlier.
05:11 So just make sure you can get it on thick enough that you don't see the cake necessarily,
05:15 but you don't want to drown it in ganache either.
05:19 So just kind of going all the way around and then we smooth it and we want to just smooth
05:30 these sides down over the edges so we have a cleaner border to work with.
05:37 With our piping bag from earlier, which we used for the border on the inside, we're now
05:42 going to do a border along the bottom.
05:45 Just kind of doing a nice scallop, squeezing and stopping just to clean it up along the
05:52 edge of the cake.
05:56 Now what we're going to do is take our other pastry bag with the larger star tip and we're
06:01 going to fill it with whipped cream to create a border along the top edge of the cake.
06:07 Put our whipped cream in the bag, shake out any air bubbles that might get in there and
06:16 we do a nice, I like to do an alternating shell along the top.
06:20 You can do exactly what we did on the bottom, just a single scallop.
06:30 And once we have this nice top edge, we can basically go ahead and fill the inside with
06:34 the cherry filling, smoothing it out.
06:37 You don't necessarily use all of the cherry, you can put as little or as much on as you'd
06:43 like.
06:44 And I'm just going to use the offset spatula to kind of smooth it, get it as close to the
06:49 edge without messing up the whipped cream.
06:56 And as a nice finishing touch, I like to take some chopped up chocolate, you can use chocolate
07:01 chips, chocolate shavings and just kind of sprinkle them around the edge to give it a
07:05 little more fun.
07:11 And we're done.
