00:00 Hey guys, welcome back to Woodland Bakery. No, that is not a baked Alaska. It's a good
00:06 idea to do a baked Alaska though, and I'll get there, trust me, for all you guys who've
00:10 been asking. But this right here is a watermelon cake. And no, it's not April Fool's Day. It's
00:17 a good April Fool's Day joke though, but it's no joke. This is real deal watermelon, iced
00:24 to look like a cake. So it's a watermelon cake. Thanks to Joseph Palomar, most of you
00:29 guys have probably seen him pop up on Facebook. He's very helpful. He sent me a link not too
00:34 long ago and said, Gretchen, I think this would be fabulous for all those people who
00:39 want to lighten up their desserts this year at 4th of July. And he sent me the link, which
00:44 actually I want to give credit to the Real House Mamas, uncensored, on Facebook. Go check
00:50 them out. Real cute page, guys. And this is where I got the original. I took the idea
00:55 from. And I kind of changed it and made it my own because as you'll see on their page,
01:00 or if you do go check the real recipe, they made sort of like a different icing. And I
01:05 wanted to keep it kind of lighter, less sweet, and I went with whipped cream. So what am
01:11 I talking about? Trying to figure it out. Yeah. We need a watermelon, all right? And
01:18 we're going to make this watermelon and ice it to look like a cake. And that looks like
01:23 a pitless watermelon. This is a seedless watermelon. A seedless, whatever. A pitless. Let me just
01:30 grab this garbage because I'm going to have to peel this watermelon. All right, so the
01:35 first thing you're going to have to do is get this rind off your watermelon, like so.
01:40 And I always use my flexible serrated knife here to do a job like this. On my pina colada
01:47 cake video, I did my pineapple just like this. Whenever you have a thick rind on a fruit,
01:54 I find that this is the best way to do it. Now, if you guys do go check out the Real
02:00 House Mamas, you'll notice that their recipe for this, they actually cut off way more of
02:08 this watermelon than I wanted to. They kind of made it really look like a cake, and they
02:16 kept it like cylindrical. I didn't really want to take off so much of the watermelon,
02:22 so I left mine sort of in this like bomb style, and why it sort of does look like a baked
02:26 elastic. But anyway, that's the way that I wanted to do it. I'm going to transfer this
02:34 right away to my serving platter because I'm going to ice it and decorate it right on there,
02:38 just like that. So, you will need my stabilized whipped cream recipe found on woodlandbakeryblog.com.
02:50 Now watermelon, obviously, is really loaded with water, right? And why they call it that.
02:55 Why do they call it a watermelon, right? I mean, that's why. It's so juicy and watery.
03:00 So, if you decide to use their recipe, or if you decide to stick a little bit more,
03:06 I don't know, lighter and less sweet like I am, either way you do it, you want to pat
03:11 off the excess moisture from your watermelon with some towels like I'm doing here. Now
03:17 when I went to try this the first time, I wanted to ice with the whipped cream just
03:23 like I ice a regular cake with my spatula like this, but because of the excess water,
03:29 it was really all just slipping around. So, I decided to go a little bit of a different
03:35 way to ice this. I have whipped cream in my pastry bag and I'm just going to do it like
03:40 this. A little bit of a different technique, but this way, guys, I can ensure that my icing
03:48 is going to stay on here. Here, I can show you what I meant. Like I tried to ice it like
03:55 this and you see how it's just moving around because of all that excess liquid that the
04:00 watermelon brings. So, anyway, we could work around that. Grab yourself a pastry bag, fill
04:06 it up with your whipped cream and we could beat that watermelon. We've got the best of
04:13 them. So, yeah, I think this is a really cool idea. Thanks to Joseph Palomar for shooting
04:21 it my way. You know, and I also wrote on the blog that this is a bit of a more diabetic
04:28 friendly recipe and then I said, "But is it really?" I mean, watermelon has a lot of
04:33 sugar in it for a fruit, even though it's natural sugar. So, I don't know. I guess it's
04:39 to each his own and whatever you guys think is acceptable and not. But it definitely is
04:45 a non-processed sugar recipe, right? It's natural fruits. It's a little like George
04:51 Washington's head, his hair. It looks like his wig. Well, then we could then take this
04:58 same recipe on Presidents Day. Right. And you've got yourself a Presidents Day dessert.
05:03 Does it not though? It does. This is George Washington's wig cake made out of a watermelon.
05:10 Nice. That's what it looked like, huh? My ice is more on top. I don't know. To me it
05:18 looked like a baked Alaska, which we will get to, guys. I just, you know. I don't know
05:22 what that is. Oh, alright. Well, it's ice cream covered with meringue that then you
05:27 take a blowtorch to. And we all know how much I like using a blowtorch, so baked Alaska
05:32 is coming. And then everybody yells at you. They do? Yeah. Why? Where am I going to get
05:37 one of those? I don't know how to use it. Hey, man. You guys want to do real deal pastry,
05:41 get yourself a blowtorch. Alright, so I then went ahead and if I can find my knife. And
05:52 I garnished with some fresh sliced strawberries. These strawberries are so sweet and delicious
06:00 too. Let me try one. Oh, here. I like those. Aren't they? Almost like cotton candy. Those
06:11 are good. Yeah, I know. Sometimes you never know what you're going to get when it comes
06:14 to fruit, so it's hit or miss. But these really were good. I love strawberries, but they get
06:18 bad quick. They do. You should not wash your strawberries, guys, until right before you're
06:24 about to use them. Whenever you get them home, don't wash them and then put them in the fridge.
06:29 You wash them right before you're about to use them. Do they last longer that way? They
06:34 will, yeah. Ah. They want to suck up that moisture. You know, the way you wash it, they're
06:38 going to suck up that moisture and then they get soggy. Alright, now. So now it really
06:46 does kind of look like Fourth of July or Memorial Day or, right, whatever. USA, red, white,
06:53 and blue. So there you have a really cool alternative dessert for your summer picnic
06:59 to this year, guys. If you don't want to go and make cake and you want to lighten it up
07:04 a little bit, I think it's a really cool idea. And when you go to cut this, people are going
07:10 to be like, "Yeah, give me the watermelon cake!" And, um, it actually is a real watermelon
07:19 cake, guys. So I think it's really cool and different. Try it out. See what you think.
