Here's a recipe for Egg Masala:

Ingredients:

4 hard-boiled eggs
2 onions, finely chopped
2 tomatoes, pureed
2 green chilies, slit
1 teaspoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Cooking oil
Instructions:

1.Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
2.Add the finely chopped onions and cook until they turn golden brown.
3.Stir in the ginger-garlic paste and slit green chilies. Cook for another minute.
4.Add the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook until the oil separates from the masala.
5.Carefully make a few slits on the hard-boiled eggs and add them to the pan. Gently coat the eggs with the masala.
6.Reduce the heat to low, cover the pan, and let it simmer for 5-7 minutes to allow the flavors to meld together.
7.Sprinkle garam masala over the eggs and masala. Give it a gentle stir.
8.Remove from heat and garnish with freshly chopped coriander leaves.
Serve hot with rice, roti, or naan.
