00:00 My name is Jamie Ship and we're here at Circular Pizzeria in Osborne Road and we're celebrating

00:11 Tell us please about your original vision for the business.
00:16 I spent some time in Italy, I'd been out there for a year and there was pizzerias on every
00:20 corner and I felt Portsmouth was lacking a decent pizza place.
00:25 There was a lot of commercial chains in Gumbel but there wasn't anything independent so I
00:29 thought it was time that Portsmouth had a decent pizzeria.
00:33 Ok Jamie, so how has the clientele changed over the 10 years that you've been here in
00:39 business?
00:40 Over the 10 years we've had a good loyal customer base, it's remained the same really.
00:44 We have people coming down every week, they treat this as our dining room, we've been
00:48 very lucky with that loyalty.
00:51 But times have changed, people have been pinched in the pocket slightly but we still have a
00:57 good loyal following and a great customer clientele.
01:02 Well of course we make it and prove it for 48 hours so we make a dough today and we use
01:07 it in 2 days time and you're quite right, it's all about a decent dough and very good
01:13 ingredients.
01:14 Thank you, so what have been the really big challenges that you've faced in the 10 years
01:20 that you've been here in business?
01:22 I think the main challenge recently has been the cost, the energy cost has rocketed, our
01:28 energy has gone from 400 to 1300, luckily that's come down now.
01:33 Food costs, cheese went up hugely, flour, oil, that's coming down.
01:39 That was a big challenge just to maintain the margin because there's only so much you
01:45 can put your price up at the front end.
01:49 Covid obviously was another challenge.
01:51 And so Johnny, finally, what are your hopes for the future for the business here?
01:55 Well we'd like to do another 10 years and hopefully our fantastic customers keep coming
02:01 down and remain having fun like we do here.
02:04 We have a great time and we treat this as a place to meet and that's why it's called
02:09 Chiad Pillow because it's a social club.
