Mexican chef Elias Silva Resinas shows us how to make the perfect tortillas for making tacos with!

00:00 Hello everyone, my name is Elias. I'm the head chef of Ayacanta and today I'm gonna show you how to make tortillas.
00:04 We're gonna start making the tortillas. So to make the tortillas we need to mix corn flour.
00:12 This kind of corn flour you can find in any store
00:15 here.
00:17 Just gonna add a little of that and a little bit of warm water, just a tiny bit.
00:21 And we're gonna mix all this that is gonna turn out into a masa. Masa in Mexico we use it for everything.
00:29 We use masa to make tamales,
00:31 tortillas for the tacos. It's the primarily
00:35 ingredient in Mexican food. So we're just gonna mix all this.
00:38 Just mix it with your hands.
00:41 We're looking to get a kind of like a dry
00:45 dough, a dry masa. I will call it Mexico.
00:50 Just mix it super well.
00:53 That's it. Once you get a
00:55 kind of like a dry masa that doesn't stick in your hand, it will be ready to go. So get a wet towel.
01:02 Just put it on top of your masa
01:05 while you turn on the pan for the tortillas so the masa doesn't get dry and then they're gonna break. Once the masa is ready,
01:12 just start making small balls.
01:15 So you can press them after to make the tortillas. Just make sure whenever you're rolling
01:21 to make the small balls, put kind of pressure so the tortillas, they're nice and tight.
01:25 Just put it back straight in the same bowl as you keep making them. Just gonna use them right after now. Just make small balls.
01:34 This depends how big you want your tortillas. If you want them big, make quite a big balls. If you want small, just make
01:41 tiny balls. I will recommend you about like 15 grams for a piece of tortilla.
01:47 Remember, tortillas are just corn and water so they're gluten-free. They're perfect for every occasion. You can make tacos, you can make quesadillas,

01:57 millions of things.
01:59 We're gonna start pressing the tortillas. If you don't have a press, you can just get a rolling pan,
02:03 some paper, roll it and then just cut it with a cookie cutter. Depends the size of the tortilla that you're looking for.

02:13 plastic bag like a sandwich bag. Just cut it off, divide it in two.
02:16 Get one of your balls.
02:20 Just put it right in the center, press a little bit.
02:23 Just press tiny bit. Fold it back again.
02:29 Press again.
02:34 Next step, let's turn on the pan, medium-high heat.
02:36 We're just gonna press the tortillas, put them there,
02:53 30 seconds on one side, about 45 seconds on the other and then just finish it for 10 seconds.
02:58 There's a saying in Mexico that if your tortilla pops, you're ready to get married.
03:04 Make sure you have a towel where you can keep them warm at all the time. So here have your tortillas
03:11 ready to go. You can make tacos, you can make quesadillas,
03:15 you can make everything, put everything you want on top. The whole process to make the tortillas for about four people,
03:22 it will take about 20 minutes.
03:24 Just enough for everyone to have two to three tacos. I wouldn't freeze the tortillas,
