00:03 Milk is a mixture of proteins, fat and water.
00:06 When heated, the proteins agglutinate and rise to the surface, forming a small skin.
00:12 The fats come to accumulate under this film, which becomes thick and hermetic.
00:16 When boiling begins, the water turns into steam bubbles,
00:20 which rise to the surface but remain blocked by the film.
00:24 There comes a time when the bubbles are quite large to lift the film,
00:28 dragging with it a part of the milk.
00:31 All that remains is to clean everything!
