Drumstick Pulimunchi Recipe Ingredients -
To Make Pulimunchi Paste -
1 tsp Black Peppercorns (roasted)
1.1/2 tbsp Coriander Seeds (roasted)
1 tsp Carom Seeds (roasted)
1 tsp Cumin Seeds (roasted)
1 tsp Fenugreek Seeds (roasted)
8-10 Dry Red Chillies (roasted)
1 Onion (Sliced)
1 inch Ginger (chopped)
6-8 Garlic Cloves (Peeled)
1/2 Turmeric Powder
1/2 Cup Tamarind Pulp (soaked in Water )
2 tbsp Oil
10-15 Curry Leaves
1 Onions (chopped)
1-inch Ginger (juliennes)
4 Green Chillies (slit)
Water
4 Drumsticks
Salt ( as per taste)
Pulimunchi Paste
Second Tempering :
2 tbsp Coconut Oil
5-6 Garlic Cloves (Chopped)

00:02 and welcome to 'Get Curried'.
00:04 Well, today's recipe is a classic Pulimunchi.
00:07 Well, when I say classic, the recipe is a classic.
00:10 But the twist to that is my own.
00:12 This recipe is Drumstick Pulimunchi.
00:15 Well, surprised? Don't be. Let's begin.
00:18 Well, it's a classic recipe, Pulimunchi from Tullunadu.
00:28 Puli means of course, tamarind, munchi means spice or red chillies.
00:32 It's a combination of something that is spicy, something that's tangy.
00:36 Now, don't be actually overloaded because of course,
00:38 a lot of ingredients go in, in making the Pulimunchi spice mix.
00:42 There's a whole set of dry spices that need to be broiled and kept ready.
00:46 There's a red paste which is going to be made with onions and garlic and
00:50 ginger and lots of chillies and tamarind.
00:53 There's also a tempering, which is onions and garlic and
00:56 ginger and chillies and things like that.
00:58 And eventually, there's also a second tempering with coconut and garlic.
01:03 Well, lots of things here and there.
01:04 But trust me when I say, I'm going to simplify it like never before.
01:08 Let's begin with broiling the spices.
01:10 Beginning with Black Peppercorns.
01:13 Moving on, Coriander seeds.
01:18 Carom seeds.
01:20 Ajwain.
01:22 Cumin seeds.
01:26 And finally, last but not the least, Fenugreek seeds.
01:29 Moving on to Red Chillies, just ensure that the stalk is removed.
01:33 And the chillies broken into rough pieces, like so.
01:37 Let's dry roast these spices till they're wonderfully fragrant.
01:42 Let's transfer this into the blender jar.
01:46 And of course, we need to allow this to cool down completely before grinding this.
01:53 Now, let's add in a couple of more ingredients to this.
01:56 Let's begin with roughly cut Red Onions.
02:00 Moving on, to Ginger and Garlic.
02:05 Turmeric powder.
02:09 And lastly, Tamarind pulp.
02:12 Now, let's add in the rest of the ingredients.
02:15 Let's add in the Red Chillies.
02:17 And finally, the Black Peppercorns.
02:20 And lastly, Tamarind pulp.
02:22 Let's cover this and run this into a paste.
02:28 With this, our Pulimunchi spice mix is done and ready.
02:34 Let's begin with regular Oil.
02:37 If you want to begin with Coconut Oil, that's also absolutely perfect.
02:41 Let's begin with Curry Leaves.
02:43 And immediately add in chopped Red Onions.
02:48 I prefer these roughly cut because that adds in to that wonderful bite in of course Pulimunchi.
02:54 Let's add in Juliennes of Ginger.
03:00 And along with this, slit Green Chillies.
03:03 Saute this.
03:06 And let's add in the spice mix.
03:13 With this, let's add in water to ensure that nothing gets wasted.
03:18 A cup full of water more.
03:28 Let's add in peeled and washed Drumstick.
03:36 Let's add in Salt as required.
03:42 And after this, we allow the Drumsticks to cook.
03:45 This will take not more than 7-8 minutes on medium flame.
03:49 With this, our Drumstick Pulimunchi is done and ready.
03:57 Let's have a quick check.
03:59 Of course, just about perfect.
04:06 Maybe just another touch of Salt.
04:09 And one very important thing that's actually missing in this,
04:12 and that is the second tempering.
04:14 For which, I of course need another pan.
04:18 And to this, I'm adding in Coconut Oil.
04:22 Let's add in some crushed Garlic.
04:27 And ensure this turns nice and golden brown in colour.
04:36 With this, Pulimunchi is done and ready.
04:39 Not just any Pulimunchi, Drumstick Pulimunchi.
04:42 Make this for your family, make this for your friends,
04:44 surprise them at the dinner table.
04:46 Serve this with maybe a bowl of steamed Rice,
04:48 a set Dosa or lots of Neer Dosas.
