We teamed up with Pepsi MAX to put Big Zuu’s pizza making skills to the test against seasoned veterans in the pizza game... We all know pizza is the UK’s favourite meal to enjoy on a big game night, so we challenged Zuu to travel around the UK to go head-to-head with pizzaiolo’s to find out what flavours are even better with Pepsi MAX and bring every football loving food fan the marquee signing they’ve been waiting for - match winning pizzas!
In our first episode of the series Zuu travels to Manchester to take on Phil, the head chef of local fan favourite Crazy Pedros. Phil shows Big Zuu his incredible cheeseburger pizza “The Mac Daddy”, before Zuu takes inspiration from the city and gets creative with his chippy tea pizza to go up against the pizzerias fan favourite. This one is a battle of the titans!

00:32 - Hi Big Z, I'm Phil.
00:33 - Good to meet you Phil.
00:34 - I'm head chef at Crazy Pedro's.
00:36 - Are you angry head chef?
00:37 - No, no, not anymore.

00:41 - Tell me a bit about this place man.
00:42 - So we serve 16 inch pizzas till 4 a.m.
00:45 and we also serve slices as well.
00:47 - I've also been told that this place
00:49 gets lively before kickoff.
00:50 - It does, yeah.
00:51 Match days, midweek, weekends,
00:53 we get a lot of business before.
00:55 Depends on the results.
00:57 - But last year must have been great.
00:58 - Last year, yeah we've been booming.

01:03 - What is the fan favorite when people come in?
01:05 - The most popular pizza I find is the Mac Daddy.
01:08 - Let me see it, let me get one Mac Daddy.
01:10 - The first stage is our pizza sauce,
01:12 which we make in house,
01:14 and grated mozzarella.
01:15 - You look like you've done this before.
01:16 - I've done this many a times.
01:17 - How many pizzas do you think you've made in your lifetime?
01:19 - Thousands.
01:20 - That's a lot of pizza.
01:21 - Mini beef burgers.
01:22 (laughing)
01:23 - All right, this is jokes.
01:24 So why do you guys make pizzas like this?
01:26 These crazy pizzas,
01:27 is it just part of the ethos of the place?
01:29 - There's toppings which people aren't using,
01:30 because you feel like it doesn't go on a pizza.
01:32 Where I think anything works on a pizza.
01:34 - So you said I'm gonna make little slider burgers.
01:36 - And then I finish off with a smoky,
01:38 - Oh my bees.
01:39 - Jack cheese.
01:40 - And then we garnish at the end
01:42 with the lettuce, gherkins, and our homemade sauce.
01:45 - Okay, I'm a bit worried.
01:46 It's looking, this is looking real good.
01:47 I don't know if I can level this.
01:49 - I don't think you will to be honest.
01:50 - Ha ha, that was a joke.
01:51 Before you put it in, just wait for me please.

02:14 We headed out in search of ingredients
02:16 for my match winning pizza.
02:17 I mean, how could I come to Manchester
02:19 and not mix in with the locals?
02:21 My guy, Big Phil, told me to visit a traditional chippy
02:24 and that's what I did.
02:25 I'm looking for ingredients to put on a pizza
02:27 that represents Manchester.
02:28 So I'm thinking, couple scraps,
02:30 mushy peas, large chips.
02:32 Can you imagine all of that on a pizza?
02:34 - Oh.
02:34 (laughing)
02:38 - It is everything, yeah? - Yeah.
02:40 - It's been a pleasure.
02:41 Next time I'll get some fish.

02:43 - I don't know about tiki-taka and all that,
02:45 but this right here is my secret weapon.
02:47 If my pizza is gonna pair perfectly with Pepsi Max,

02:56 Got my chippy tea ingredients sorted.
02:57 But before we get cooking, I gotta ask.

03:11 'cause I'm stepping in.
03:12 I've got my little stove.
03:14 So I'm about to make a curry sauce from scratch.
03:16 Some would say I'm an award winning chef.
03:18 Some would say you're lying.
03:19 I can't, I've got a bar going in.
03:21 How long have you been cooking for?
03:22 - Like 20 years.

03:24 Okay, let's not talk about experience.

03:28 And then we've got some cued apples.
03:30 I always feel like when you're in a kitchen,

03:41 This is high level sauteing.
03:43 All right, these are cooked down.
03:44 Now we need to add some seasonings.
03:45 So I've got some salt, some curry powder,
03:47 some turmeric, and chili powder.
03:49 Oh, you can feel it as soon as it hits the pan.
03:52 Seasonings are locked in now.
03:53 We're gonna hit it with some flour.
03:54 - It looks like a roux.
03:55 - Thank you.
03:56 Come on, you know when you make a roux
03:58 and it starts developing a stock
04:00 and all these things, I start feeling all chuffy.
04:01 Nice cook down.
04:02 Veg stock.
04:03 - Yeah.
04:04 - Go straight in.
04:05 - Visual.
04:06 - I know, deglaze the pan, all that good stuff.
04:07 Got some honey going in for the sweetness.
04:09 Are you getting worried now?
04:10 - Yeah, I am.

04:13 - Then to give it that chippy tea vibe,
04:14 we go with some malt vinegar, bial,
04:16 and then we hit it with a squeeze of lemon.
04:17 Let this simmer down.
04:18 Once it gets nice and thick,
04:20 give it a little bit of a blitz.
04:21 There's only one thing left for us to do.

04:24 Go on, get in there.
04:25 - It's really good.

06:39 So we've got a base of mushy peas,
06:40 fresh chips, cheddar as well,
06:42 'cause we like a variation.
