00:00 My name is Panos, I'm the co-owner of St Michael's Fisheries.
00:04 I've been doing this job for around five years now.
00:08 We own a 100-year-old ship in the heart of Headingley
00:12 close to the cricket and rugby ground
00:16 and we're really happy to be part of Headingley.
00:20 And we've voted one of the best fishing chips in the area?
00:24 Yes, we've been selected in the top rated best fishing chips in Leeds.
00:28 We're proud of that, our team is working very hard for it.
00:32 And what makes your fishing chips good?
00:36 Top quality ingredients and love, I would say.
00:40 Have you always done this job?
00:44 I've done many jobs. I used to be a plumber back home in Greece.
00:48 In England I worked in fishing chips,
00:52 I did some work in the Greek takeaway and I worked as a plumber for a bit.
00:56 But fishing chips is my main job.
01:00 What's the customer like?
01:04 Headingley is a very nice and laid back area
01:08 and all the customers are lovely.
01:12 We have regulars that come the same day every week, which is lovely.
01:16 It's a very nice place to be.
01:20 Obviously it's so close to the sea, do you get a lot of customers from out of sport?
01:24 Yes, when there's a match day, two hours before the match people start coming out the door.
01:28 And we're just waiting for the fish and chips.
01:32 How many fish and chips can you do in a week?
01:36 In a week? I haven't really counted to be honest.
01:40 But it's a lot I would say.
01:44 Do you do a lot on a match day?
01:48 On a match day, yes, we might do 200 orders in a couple of hours.
01:52 What's the secret to the chips?
01:56 For me it's the beef dripping.
