00:00Hi, I'm Paddy Rady. I'm the owner of Rady's. I work out of the Little White Horse in Burnley.
00:06So basically Rady's started in 2020 in the midst of lockdown. I was currently out of work due to
00:15being a chef and there was no way of making money basically, so I started smashing burgers from my
00:21kitchen at home. Fast forward two years, three years and I've got my own restaurant. So we're
00:29based on Hamilton Street in Burnley. We open for takeaway only Wednesday, Thursday, Friday,
00:36Saturday, Sunday as Rady's but we also cater for the Little White Horse's wine bar which is open
00:42Thursdays to Sundays. We use all our beef from a local, well kind of local butchers, Riley's and
00:47Crozier Booth. Literally the pasture for the cows is a stone's throw away from the butchers.
00:54They're 35 day aged and we add our own blend of spices once the burgers are smashed.
01:01We make all our sauces in-house. We try and source the best ingredients as we can just to
