Having spent 25 years in Holland, a retired opera singer and a music teacher approaching retirement have decided that now is the right time to return to the UK and, with Alistair Appleton's help, find a new home in Somerset or Gloucestershire.

01:08like the Mendip Hills, all glowing in the spring sunshine.
01:16Ah, here on Escape To The Country, we love this time of year
01:19because it's the season for tulips.
01:21And look, this is a particularly fantastic showing
01:24in the old orchard at Durham Park in Gloucestershire.
01:27But actually, all over the country,
01:29nature is pushing up this kaleidoscope of colour
01:32to tell us it's OK, summer is on its way.
01:36And the tulip is particularly appropriate for our show today.
01:42We're in the south-west of England,
01:44exploring the counties of Somerset and Gloucestershire.
01:49From ancient Arthurian legends
01:51to striking historic National Trust properties
01:54right up to internationally renowned music festivals,
01:58this area has been compelling people for centuries.
02:04You're moments away from beautiful landscapes,
02:06rolling countryside hills and so close to the sea.
02:09It really does have the best of everything
02:11and has been a great place to be.
02:15The Somerset coastal town of Portishead
02:17is a great spot for anyone who loves water and artworks,
02:21including this sculpture,
02:23which signifies the town's relationship with maritime radio.
02:29The architecture in the village of Backwell
02:31gives the impression of a bygone era,
02:34but this community is only seven miles from the nearest city,
02:37making it a great rural base for commuters.
02:42You can have all the benefits of living in the countryside here
02:45while still maintaining close links to places like Bristol, Bath, to Wells.
02:50You've got access to the restaurants, to the culture.
02:53But living here, you've got the beautiful countryside as well.
02:59One of the great things about showing property in this area
03:04and in this season
03:06is that it is the quintessence of the British countryside,
03:10which is particularly poignant for our housebuyers today
03:13because they are making a great return from a life overseas.
03:21Hi, I'm Carol. And I'm Ian.
03:23And I have been living here with Ian for the last four years.
03:26And I have been living here with Ian for 25 years.

03:35Retired opera singer Ian and soon-to-be retired music teacher Carol
03:39originally met while studying music.
03:45He wore awful cowboy boots.
03:48He never smiled.
03:50And then, nearly 20 years later, we had a reunion party
03:54and there's this glorious, lovely person.
03:56So I said, OK, that one will do. I'll have this one.
04:00So, about eight months later, we were married.
04:05Carol moved to Holland, where Ian was singing,
04:08with a Dutch national opera.
04:10But 25 years later, their hometown is losing its appeal.
04:15A lot of high-rise apartments are being built,
04:18so our views are being limited by this.
04:21And we want to come back to the UK so that we have open countryside.
04:27They're looking to move to the Somerset area,
04:29which is halfway between their families.
04:32And their retirement will leave them plenty of time
04:35to see friends and family and for their extensive list of interests.
04:40Music, bridge, tennis.
04:42We're looking forward to anything the community has to offer.
04:46A little bit of wine and food thrown in.
04:49One of the important things would be the church community,
04:52and that will also involve singing and music.
04:57As they'll be making lots of music,
04:59Ian and Carol would like a detached or possibly semi-detached property
05:03with a music room.
05:05They want at least three bedrooms,
05:07plus a large open-plan kitchen and character features.
05:10Their budget is £550,000,
05:13with a bit of wiggle room for minimal alterations.
05:20So I always love trying to find a place
05:23for people who are coming back to England after a long stay abroad.
05:26It feels like a homecoming.
05:28So I'm hoping that we're going to find the right house.
05:31I guess the main thing is their music.
05:34I've known a few opera singers, and when they sing, they're really loud.
05:38So part of our brief is to find somewhere where they can make that music
05:43and not disturb their neighbours.
05:45We're starting our search to the south of Gloucestershire,
05:48on the outskirts of the Cotswold town of Tetbury,
05:51where I'm meeting Ian and Carol on the local playing fields.
05:57So just to keep you feeling kind of grounded,
06:00I've brought you to a very flat bit of English countryside
06:03so that you don't feel too homesick for the Netherlands.
06:06Or the windmills.
06:08No, I couldn't manage windmills.
06:10But how do you feel?

06:14But how are you feeling about being back in England?
06:17It's a 50-50. You have your life for the last 25 years,
06:20and then you're really excited about coming back here.
06:23So definitely mixed at the moment.
06:26Are you kind of of one mind when it comes to properties?
06:29We normally start poles apart, and then we gradually go,
06:32OK, we both like this. This is lovely.
06:35It finds the middle, which is absolutely beautiful,
06:38which you never would have thought of.
06:40Very good.

06:48And in terms of the property, what are we looking for?
06:51I know you need a music room.
06:53Yeah, it's going to be hopefully semi-detached or detached
06:56so that we can make a lot of noise.
06:58We have piano, flute, viola...

07:07And the house that we're going to show you is actually very close.

07:22Tetbury overflows with both history and modern attractions.
07:26Its glorious golden Cotswold stone architecture
07:29houses shops, cafes and restaurants,
07:32with people travelling miles to explore its antique shops.
07:36The 17th-century market house is Grade I listed
07:40and today it can be hired for private functions
07:43or perhaps recitals.
07:46The town is within easy access of the M4 and M5
07:50and connected to other nearby towns by bus.
07:54Just a ten-minute walk from the vibrant town centre,
07:57in a quiet location with countryside all around,
08:00is the first house we've come to see.

09:23is the doorway between this room and that room.

13:53We're in Gloucestershire and we're going to head back into Somerset
13:56to see what that has to offer.
14:03Somerset has more than its fair share of charming villages to explore,
14:09so we are sending Ian and Carol to have a look around Chew Magna
14:14on the edge of the Mendip Hills.
14:16It takes its name from the River Chew, which winds through the area
14:21and just over 1,000 people call the village home.
14:27This is lovely. This is beautiful.
14:29Old village feeling.
14:34Located half an hour from both Bath and Bristol,
14:37it's popular with locals and those further afield,
14:40as despite a village status, it boasts a range of artisan shops,
14:45cafes, pubs and highly rated restaurants.
14:51Residents also benefit from a local dentist, pharmacy
14:55and a church dating back to the 12th century.
15:00This is the sort of village that would be lovely, the parish church.
15:03We'll be singing in the parish choir again.
15:09I've lived here about 23 years, so I'm a relative newcomer still.
15:13It's a really nice village to live in.
15:16There's lots of clubs and societies to join.
15:19Fantastic walking and cycling straight from the village here.
15:22It's a really nice place to live. I can thoroughly recommend it.
15:29To the south of the village is Chew Valley Lake.
15:33It's extremely popular with locals,
15:35as keen chorister Catherine Hunt can attest.

15:56It's sort of a dreamland for us after Holland being so flat.

16:06I used to conduct quite a bit.

16:11I personally get involved with a choir
16:13because I'm the chair of Chew Valley Choral Society.

16:18And I love singing with them.
16:20I've been singing with them for about six years.

16:24In fact, we're organising a Chew Valley Big Sing
16:26and we're trying to draw in church choirs, community choirs,
16:30try to get everybody in the valley enthused about choral singing.
16:34Well, that's good news for us, isn't it?

17:09in the village of Stoke St Michael.
17:12There's a strong sense of community here
17:15and the church provides a weekly service as well as coffee mornings.
17:19The local pub was built in the 17th century
17:22and is thought to have been the site of secret Second World War meetings
17:27amongst the top Allied commanders.
17:30Today it offers food, quiz nights and live music.
17:34There's a convenience store, a village hall
17:37and less than a minute's walk from the church
17:39is the next house.

29:40We have a very experienced organist
29:42who plays really well and we've got a small church
29:44choir and we've also got a church band
29:46and we all play together
29:48all at the same time so it's
29:50guitars and drums and bass and saxophone
29:52and organ and choir
29:54and everything
29:56all simultaneously.
29:58And all the same music hopefully.

35:17and Carol appreciate the high quality finish,
35:19the bold interior design
35:21just isn't to their tastes.
35:23On the market for
35:25£550,000, even the
35:27possibility of singing in the next door church
35:29isn't enough to persuade them
35:31that this is the one.
35:49While our house hunters have a think
35:51about the properties we've seen,
35:53I'm going to discover more about
35:55an increasingly familiar summer site.
35:57Since 2010,
35:59the price of oilseed rape
36:01has more than doubled.
36:03So I've come to a farm near Froome
36:05in Somerset to learn more about
36:07its popularity.
36:09After months of grey skies,
36:11leafless trees and brown
36:13fields,
36:15it is a heart-lifting moment
36:17in the UK when you suddenly go,
36:19wow, look at that big field
36:21of yellow rape.
36:23It's so joyous.
36:27Andy Fussell's family have been growing
36:29rape here for over four decades,
36:31so he's the ideal person
36:33to explain the hidden treasures
36:35of this liquid gold.
36:39The bit that we all like is not the important bit, is it?
36:41No, the bit you like is the flowers.
36:43The flowers? Yeah, the bit that I like
36:45is also the flowers.
36:47But I like the pods. The pods, which stand
36:49further down? Yeah, because they've got the seed.
36:51And in the seed, we use
36:53in the press to make
36:55some oil. Every flower
36:57is a pod.
36:59Every pod has got seed in.
37:01So it's a good yield. Every bit of seed
37:03makes some oil.
37:05And we look to
37:07yield, hopefully, from this about a tonne,
37:09tonne and a half, an acre.
37:11So at the end of July,
37:13we will come in and we will cut it,
37:15and the little black seeds pop out everywhere.
37:17It's quite brittle. Are they big?
37:19They're like mustard seeds.
37:21Maybe a bit bigger. Can you eat them?
37:23Yeah, yeah. You can eat them.
37:25It's like your poppy seed
37:27on the outside of your bread.
37:29Once you press the seeds,
37:31you get lovely
37:33rapeseed oil, which is suddenly very fashionable.
37:35Is that your doing?
37:37I'd like to say we had a part in that
37:39nearly 15, 16 years ago.
37:41We found a niche for a British crop
37:43where British farmers can produce
37:45an oil which is good as you will find
37:47and as healthy as you will find
37:49anywhere.
37:51Rapeseed
37:53makes one of the healthiest oils
37:55in the world, with benefits like
37:57half the saturated fat of olive oil.
37:59And the cold
38:01pressed process employed here
38:03increases those benefits.
38:05So Andy's brother Tim
38:07is showing me how it works.
38:09It's very small
38:11and sweet.
38:13It's small and sweet, but it is incredibly important.
38:15We press the seed all the way
38:17through the year. So although we harvest it
38:19in July, August
38:21we then store it
38:23and we press it all the way through the year.
38:25It makes our oil fresh pressed
38:27so we call it fresh pressed.
38:29So I'm assuming it comes
38:31in a hopper.
38:33That big bin there, that's full of seed
38:35and then it gets called
38:37up onto this little hopper here.
38:39So this shaft
38:41is like a big Archimedes screw
38:43and this is a choke here.
38:45So when we start the press up, it pushes the choke
38:47back in against the seed, it compresses the seed
38:49the oil then is expressed
38:51out through these pressing veins
38:53and you can see it coming out here
38:55but you can still see there's quite a lot of sediment
38:57in the oil. The less you do
38:59to the oil the better, but we still have to
39:01get the sediment out.
39:03So it's a question of just delicately
39:05looking after it as it goes through this
39:07sort of cleaning and polishing phase
39:09so that the oil comes out as pure as it
39:11possibly can be. And in doing that
39:13then it maintains all its
39:15nutrients, all its goodness, all of that
39:17kind of thing.
39:19Fussell's
39:21Fine Foods produces a variety
39:23of flavours and I can't wait
39:25to try them. This is the
39:27raw oil. Does it taste of anything?
39:29It's got a slight nutty texture to it.
39:33It is quite nutty. But it's
39:35quite neutral, it doesn't overpower.
39:37That's the garlic oil, I'll try that one. And you can
39:39cook to quite high heat.
39:41You can indeed, yeah, you can take it, it's got a very
39:43high smoke point. And it's
39:45really good for your roast potatoes, Alistair.
39:47That's really good. But then if you want to
39:49add the flavour at the end, in a
39:51risotto for example, you could try the truffle
39:53oil. You need a little bit. You only need a little
39:55drop. There we go.
39:57We grow it, we press it, we
39:59use it in the kitchen. Oh, that's
40:01delicious. It's delicious.
40:03Thank you so much. And please thank

40:07had my eyes opened to
40:09the true benefit of rapeseed oil.
