00:00My coffee game started in 2000, very, very rare, with my uncle in Germany.
00:09In 2020, it starts in Bexelonzee, as a Chuck E.'s baristro, we're opening Bexelor Railways
00:18train station inside.
00:21We've been running there for three years, and then we've been opening here this year,
00:29three months ago.
00:30We've been searching here about three years to open a coffee shop in Kingsroad, in St.
00:37Leonards.
00:38What we're doing is specialty coffee, we're working very, very closely with our farmers.
00:45We know the farmers personally, and we're working with them very closely and we're asking
00:52them special things that he can do for the cafeterias, what we're reserving for them.
01:02I personally like South America, because the salts and the undergrounds are more sweet.
01:09The coffees are more tasty, more sweet, like strawberries, bananas, nutty, chocolatey.
01:19We do like different process of the coffees, like dry process, wash process, honey process.
01:29So we're following the season circle of the coffees, and this makes us have more control
01:37from the farm to the cup, from cherry to cup, we say, and we're roasting ourselves, our
01:46coffees with different profiles and different roasting styles.
01:51The plan is we want to expand it as a Chucky's Baristro, more coffee shops in Sussex.
01:59So we're already searching new places, bigger places with breakfast, brunch, and lunch.
02:10And we're trying to open also our showroom, because we want to do the roastery as a showroom
02:17that people can come and see all the process, how we're roasting the green coffee, returning
02:26to the brown, and then how it comes, all the process through by customers can see that.
02:36We like to do some showroom as a coffee shop showroom, and we have also wholesale, we're
02:45supporting also other coffee shops and other restaurants and other businesses as well with
02:51our coffees, so they're buying coffees from us.
02:55We're not commercial coffee, so what makes us different is that we're working very close
03:01to with the farmers, but we're also searching that our coffee farm is also specialty.
03:06So we're having harvest time from this year, so we're bringing fresh coffee, and we're
03:13roasting as we go.
03:15So we have all this fresh roasted and fresh grind as you see as well here.
03:20So every single cup, every single customer, anytime, whenever they come, they're gonna
03:26have here fresh coffee, fresh roasted coffee.
03:30So the coffees have dates, so you can't find here older than one month, two months coffee.
03:37We're having all these fresh coffee beans roasted by us, and we're promising this to
03:44our customers, this is what makes us different than others, and we're following the seasons
03:52as the coffee beans is growing on the trees.
03:57So the harvest time is this year, we're having this year's coffee, so this year's coffee
04:01we're not bringing for next year, because it's not specialty anymore, it's one year gone.
04:08We believe that, so that's why the customers, the first day, they will always get anytime
04:16the same coffee, same service from us, like first day.
