00:00Miguel & Maria was established in 2015.
00:12We opened our first restaurant at Lilac Street, Marikina during the height of when everyone
00:18was converting neighborhood villages into small food strips.
00:24So we opened it during the height of Maginhawa, Aguirre in Paranaque, and then Lilac here
00:30in Marikina.
00:31So we were able to ride that trend.
00:35A year after we started conceptualizing Comedor, and then we got the property here along Fernando
00:42Avenue in Marikina, we put up our first traditional Filipino restaurant.
00:46Comedor is well-derived from the word food hall in Spanish.
00:51So what we wanted to achieve here is showcase the mix of Spanish and Filipino style of
00:57cooking into the dishes that we serve here at Comedor.
01:01So basically that's where the background of most Filipino dishes are.
01:05So hence Comedor.
01:06Comedor was established in 2016 here at Fernando, and then the rest is history.
01:14Miguel & Maria, as well as Comedor, is basically the brainchild of my wife, Maria.
01:20She's the one more of the kitchen person.
01:23I help her out through marketing and all the other stuff, but Maria, or Maru, together
01:29with our chefs on board, conceptualizes most of the menu, from conceptualizing to execution
01:36up to polishing, everything that comes out of the kitchen.
01:41In Comedor, we are known for our classic kare-kare.
01:44This is made out of, well, the usual peanut sauce, et cetera.
01:48But this is what Maru would like to serve my family during lunch, during Sunday lunch.
01:54If you have your Sunday's best clothes, this is her Sunday's best food.
01:58It's been around my family and with Comedor since the very beginning, and this is what
02:04it came to be known as Comedor's specialty dish.
02:10Everlasting is a traditional Marikina food.
02:13You know, Comedor being a homegrown Marikina brand, we'd like really to share what we Marikenos
02:20enjoy eating, like, casually.
02:23It's very easy to make.
02:25Every household has this own type of recipe, but the Everlasting is one of the best Marikina
02:30comfort food you'd taste here in Marikina.
02:37Lumpiang Ubad is our classic take on the famous Lumpiang Ubad.
02:41We want to incorporate our creativity by using the lumpiang wrapper as the dish that
02:47would hold on to the entire dish.
02:49Again, conceptualized by Maru and together with all the chefs around here, so we also
02:54got known for the portion sizing of our Lumpiang Ubad that can serve at least a party of four
03:00to five.
03:02The Puto Bumbong Cheesecake is Maru's, I don't know, it came out of her, like, wildest idea.
03:11As much as everybody loves the Puto Bumbong Cheesecake, we enjoyed making it, we enjoyed,
03:16like, conceptualizing that cake.
03:19Well, this was Christmas 2023 and we wanted to, like, come up with a Filipino version
03:24of a cheesecake.
03:25I'm a big fan of cheesecake, so we thought, like, why don't we marry the season, like,
03:31Puto Bumbong season, and a classic cheesecake, hence Puto Bumbong Cheesecake.
03:36So, more than the dish itself, I think what's remarkable here is the time spent during R&D.
03:42I think we were having a blast coming up with this and naming this dish, and we just enjoyed
03:48the whole process as much as we enjoyed that dessert.
