Learn how to make Zucchini Spaghetti at home with our Chef Varun

Ingredients:
1 Green Zucchini (cut into half)
1 Yellow Zucchini (cut into half)
Cold Water
1 cup Coriander Leaves
8-10 Cashew Nuts
3 Green Chillies
10-12 Garlic Cloves
Salt (as per taste)
Oil (as required)
20 gms Parmesan Cheese
½ cup Water
Salt (as per taste)
Cherry Tomatoes (for garnishing)
Parmesan Cheese (for garnishing)
Black Pepper (for garnishing)

00:00Hello, you lovely people, this is me the Bombay Chef Varun Inamdar,
00:03and welcome to Rajshri Food.
00:04But the recipe for now, Zucchini in Pesto Sauce.
00:07Let's begin.
00:08Well, several moons back, a new tool took light in the culinary scene,
00:12and that is a Spiralizer.
00:14Well, various forms of Spiralizers actually took birth,
00:17but the origination was done by this person called Ali Malfuchi.
00:22If you don't have this, invest in one.
00:23It's a nice tool to have.
00:25Well, what we need to do for this is cut the Zucchini into 2 halves,
00:29specially for this kind of a Spiralizer.
00:31And then, you lock it like so,
00:34and then slowly start increasing the pressure,
00:37and start going towards the Spiralizer.
00:39What happens is, these grits here, these blades here,
00:42they eventually jut out spaghetti-like Zucchini.
00:46As simple as that.
00:47This is possibly carb-free.
00:49There are no carbohydrates in this recipe,
00:51so I'm sure there's no carb here.
00:52For all those ones who are looking at a carb-free pasta,
00:56go all out and make this recipe.
01:00Snip the ends off.
01:03Cut this into a half.
01:07And poke this onto this side of the Spiralizer.
01:20Let's place all of these Kursherti Spaghetti or Zoodles in cold water.
01:25Let's now move on to the sauce.
01:27I'm making a Cilantro Pesto or a Coriander Pesto.
01:30For that, the core ingredient of course, Coriander Leaves.
01:34Snip this roughly.
01:36Let's add in some Cashew Nuts.
01:39Now, if you know the original recipe, it calls for Pine Nuts.
01:43I'm adding in a little bit of Zing, a little bit of spice in this recipe.
01:46And that's the only reason why I'm adding in some Chillies.
01:49Couple of Cloves of Garlic.
01:51A touch of Salt to ensure that the colour remains bright, emerald-like.
01:56To make a coarse or a fine paste, you need some Oil.
01:59This is regular Vegetable Oil.
02:01And along with this, some Parmesan Cheese.
02:04We cover this and we grind this up.
02:09Let's transfer this Coriander Pesto straight in a wok.
02:13Half a cup of water.
02:26Let's turn the flame on.
02:27And allow this to boil for a couple of seconds.
02:30Let's add in our Khurjeti Spaghetti.
02:33Drain out all the possible water.
02:35And allow this to cook precisely for 30 seconds.
02:39Let's gently mix this with the help of a tong or a tweezer, like so.
02:45Just a light sprinkling of Salt.
02:47Considering the Zucchini would also shrink and shrivel.
02:51With this, my version of Zoodles or Khurjeti Spaghetti, done and ready.
02:56Well simple, easy, quick going, humble and absolutely stunning looking on the table.
03:01You add in some Cherry Tomatoes.
03:03Generous sprinkling of Parmesan.
03:05Some more Black Pepper.
03:07And there you have the most amazing, stunning, Italian, well maybe not,
