This vegetarian dinner is rich, decadent, and shockingly low on calories. In this video, Chloe shows you how to make a cheesy cabbage gratin with a garlicky, herbaceous sauce. Covered in layers of the aromatic sauce and gruyere cheese, the charred cabbage will surely satiate your evening appetite.

00:00Cheesy cabbage gratin is going to be your new favorite dinner.
00:03Char cabbage wedges in a skillet and then put them in a big baking dish and season with salt and pepper.
00:08Then a little cornstarch and veggie broth is going to help thicken our sauce.
00:11It's seasoned with lots of shallots, garlic, thyme, rosemary, and crushed red pepper.
00:16Add in some heavy cream and some parm cheese until it's all melted and thick.
00:21Then that sauce gets spread all over our cabbage and it's going to get baked.
00:25Just like that cheesy layer on top of a gratin, we've got to have it on our cabbage too.
00:29These come out hot, melty, soft, and sweet, but if you ask me, this is the best part.
