00:00Hi, I'm Chef Richard Sandoval and we're here in Fort Worth, in my restaurant Toro, celebrating the Day of the Dead.
00:06Here are some signature dishes that we made for the show.
00:09It's the Bread of the Dead with a Palo Santo butter, an orange, a fruit compote, cinnamon, marigold, strawberry sauce, orange sauce.
00:20We made an alliance with a New York pastry chef, Fanny, from New York, based in Brooklyn.
00:27Well, let's get started.
00:28We take our bread, cut it, add a little bit of that Palo Santo butter, so that it takes on flavor.
00:40And the butter, we take a little bit of Palo Santo, we add a little smoke, and we impregnate it in the butter.
00:46A little more.
00:50Then we take our bread.
00:57Perfect.
01:10Here is our bread, with nice marks.
01:13Now, we take it, we put it on our plate.
01:21We're going to take our strawberry sauce.
01:27A little bit of our orange sauce.
01:37Now we're going to grab our cinnamon crumbles.
01:44A little bit of marigold.
01:50Our fruit.
01:57A little bit of basil.
02:03Our orange.
02:05And here we have our bread of the dead.
02:08We celebrate here in Tonopah the Day of the Dead.
