00:00I'm Roberto Bottero, chef patron of the Arnaldo Gastronomic Clinic in Rubiera.
00:13The restaurant started in 1936.
00:17My grandfather Degoli Arnaldo started the restaurant business in a building in Locanda in the late 1900s.
00:25The Arnaldo Gastronomic Clinic was founded in the post-war period.
00:34In the 1960s, many doctors came from the hospital in Modena to eat here.
00:41My grandfather said, this place is full of doctors.
00:45You take care of the medicine, but I take care of the food, which is much better.
00:50In 1956, we were awarded the Guida e Ravaggia Signate in Italy.
00:56It was an important recognition for us.
01:00In 1959, we were awarded the first stars in Italy, and we were awarded the star.
01:06It was an immense joy for my grandfather and for his daughters.
01:10We have been custodians of a tradition for 88 years.
01:15Ramona and I are the third generation, and now there is already a fourth-generation son who works in the kitchen.
01:25Our philosophy is to remain anchored to our tradition and our dishes.
01:34Our main dish is the Spugnolata and the Carrello dei Bolliti degli Arrosti.
01:42The Bollito Misto is our main dish.
01:45We serve the Bollito Misto all year round, even in August, when we are open.
01:51It is a dish that is very much appreciated.
01:59We have customers who have been coming here for generations.
02:03So we have the third and fourth generation of customers who come here.
02:08My grandfather and my great-grandfather used to come here.
02:11So it is a beautiful thing.
02:14Lately, many people have congratulated us on finding the flavors that they no longer felt.
02:22We feel flavors that are now lost.
