00:00Yeah, so I'm David Bailey, one of the co-owners of Bailey's Cheese and Charcuterie here on
00:14Clifton Street in Blackpool.
00:16So this opened in August, August or September?
00:20Yeah, we opened in August this year and it's really going well, going from strength to
00:27strength.
00:28A lot of local business, which is what we really were hoping we would get and we have
00:34got it.
00:35Can you tell me about the launch event and the wine event that you've hosted here?
00:41Yeah, so we did a pre-launch back in August and it went really well, a lot of social media
00:51content and a lot of people on the back of that came in within the first couple of weeks
01:00and they really enjoyed it.
01:02Last week we did a cheese and wine tasting evening, which also was a sell out and people
01:09really enjoyed it and they're already asking when the next one is, which is going to be
01:13early part of 2025.
01:17So you've had lots of good feedback from customers and stuff.
01:22Yeah.
01:23What's been the most popular product or food you've been selling during the pre-launch?
01:29Our most popular product is the artisan cheeses because you can't buy them anywhere else in
01:36Blackpool and for the food side is our cheese and charcuterie boards or our cheese tasting
01:43boards so people can try some of those artisan cheeses and people are loving them and we're
01:49getting really positive feedback back at them.
01:52Yeah.
01:53So you talked about the stuff that's not sold at supermarkets, so how does this tip out
02:00all the body of paper from supermarkets and so on?
02:04Our products, we stock 99% of them you won't find in any supermarket because they're all
02:11artisans, small business, they don't really deal with supermarkets, it's gins we've got
02:19from Penritham in Preston and again they're just a micro distillery, they don't deal with
02:26anybody else in this area.
02:33So recently the business has done an article on different empty donut shops and businesses
02:39closing and stuff like that, does this give you any insight?
02:45Yeah the empty shop situation on Clifton Street, 99% of them are already filled, there's a
02:51few empty ones, one has just moved to a new location, the other one, the whole building
02:56has been sold so it's going to be changing hands with new owners very soon so I'm not
03:01really concerned about the empty shop situation in Blackpool or on Clifton Street itself.
03:09Can you tell me a little bit about your future plans for the business?
03:19Well it carries on growing the way it is, we'll be hopefully employing staff soon, we've
03:28got ones to do more of the cheese and wine tasting evenings in the future.
