As global temperatures continue to rise, the race to climate-proof potatoes is crucial for China's food security and agricultural future. In a Beijing research facility, scientists have harvested a cluster of small potatoes, with one barely the size of a quail's egg. Grown under simulated future climate conditions, these miniature spuds weigh just 136g - less than half the typical weight of Chinese potatoes.
