00:00Using the beef that we boiled earlier, we will continue to make Sirkele, the dish of the Bulacan people.
00:09If you don't eat animal blood because of dietary or religious reasons, we have already started making another version.
00:17And instead of using blood, this is what we can use as a substitute.
00:22Instead of using animal blood, we will be using the dark soy sauce.
00:28Compared to the light or the type of soy sauce that we have here in the Philippines,
00:34we normally use this ingredient to specifically darken our dish.
00:40What's better than that, even if you put a lot of it, it won't make the dish too salty.
00:45So more on color purposes is the reason why we use this type of soy sauce.
00:53So, as you can see.
00:56Imagine, I didn't put a spoonful of dark soy sauce yet, but that's the shade that it gave to our dish.
01:04Even if the color won't be totally black, but again, if you're going to make it a substitute for Sirkele or Dinaguan,
01:12I think this shade will also do.
01:15We can just have to simmer this, maybe longer, so that the color of our dark soy sauce will penetrate.
01:26Meanwhile, for our Sirkele, you can also add this stock if you want it to be more soupy.
01:43We're just adding some sugar and of course, vinegar.
