Here are six types of potatoes and how to cook with them.

00:00There are over 200 types of potatoes sold in the U.S., but really, there are only three
00:05categories that you need to be concerned about.
00:08Starchy potatoes, such as russets or Idaho potatoes, are best for baking, frying and
00:14mashing.
00:15They're low in moisture and high in starch, so they crisp up really well.
00:20Waxy potatoes are higher in moisture and lower in starch.
00:23They are not good for mashing because they can get really gummy really fast, but they
00:28are excellent for boiling, they are excellent for roasting.
00:32You can use red skin potatoes.
00:33They belong in this category.
00:35You can also have the smaller baby potatoes or even fingerling potatoes, all-purpose potatoes.
00:41All-purpose are the best.
00:42Types of these, you will often see them sold as Yukon Golds or Gold Potatoes.
00:47You can do anything with them, and they're not too starchy, and they're not gritty, but
00:51they're not gummy.
00:52I just, texturally, I like them the best.
