00:31kitchen and start preparing. So let's see how this goes.
00:42I'm here with Chef Uwe in the kitchen of the Radisson and I've prepared some raw food dishes
00:50for him to try. I've made a three course meal, we've got a mango tomato soup, we've got a pasta,
00:57the noodles are made from beetroots and zucchinis and then we've got a raw vegetable sauce and a
01:03raw cashew nut cream on top and then for dessert we've got a raw cheesecake made from nuts and
01:09dates and strawberries. So Chef Uwe, I would like you to just have a taste of these and tell me how
01:17you think these raw dishes stand up in your opinion. First look, it looks great, it looks a nice
01:23three course meal. I think I could live with that for a day but I could imagine to have some really
01:31nice crispy meat or something on top would be great. But I'm sure, I mean it looks good, I'm
01:36sure it tastes great. It's very nice. You have the, basically the tomato gives the soup the flavor
01:50and the sweet mango takes the acid of the fresh tomato away because normally what you would have
01:56with a fresh tomato you have quite a lot of acid which is normally you would have in the back of
02:03your tongue. Nice creamy, a little bit heavy because it's in the nuts but I mean it has to
02:10go together with all the rest. It's also, it's got some, it's got a fresh lime and some basil leaves
02:16in it as well to give it a like a pesto flavor. Yeah, you need to always to try whatever raw or
02:23cooked. It needs some acid. Again, the combination of the strawberries on top and then the dates,
02:43it goes very nice, goes very nice together. If you give me this as a meal, I would say it's a
02:50nice balanced meal. It's everything there what you need and it's great. From a chef's point of
02:55view because there's been no oils, no salts, no garlics or spices used in this, do you think that
03:02it could stand up to people's taste buds? Do you think there's enough from a flavor point of view?
03:07I think the flavors are there because one of the reasons is because the food is raw. It's not cooked
03:13so you have the natural flavors out there and you get the seasoning through the vegetables. Each
03:19herb or each food or each vegetable has got its own flavors and you just have to combine it right.
03:25And I think like here the combination is very nice. I think it's something what people would
03:30need to get used to it. I would think for me to eat this for a longer period, I would need to
03:38convince myself first because people are used to butter, used to oil, used to bacon. Food is a
03:46lifestyle. Food is not just something you stuff in yourself because you need to eat. You need to
03:50enjoy it. And if you go open-minded and really taste, then I think it's very nice.
