24:53base and then we have the China chat so China is chickpeas and the chart is like a spice in terms

27:21it's your story pulls on the emotions and the heartstrings yes sir preparations for the big
27:26pitch I've never actually pitched before I've never done any sort of public speaking apart from
27:32my speech at my wedding I know what you can do in a pitch and how good you are I need you to give me
27:37that information to make sure I'm that good you're so personable just make sure it doesn't come across
27:43too informal I don't think it's a massive issue on how it's said as long as it's confident Lord Sugar's
27:49investment isn't just for your benefit it's for him as well like you need to sell yourself and
27:53you'll do that so effortlessly and naturally you know you've worked your way from just an apprentice
27:57starting a business with two kids showing that struggle showing them kind of your vulnerability
28:02there I am the most passionate person when it comes to air conditioning this is my life I think
28:08that's a lovely way to finish it off and then you open the floor to questions and that's it

33:44yesterday I actually developed a new pizza it has a dal based dough and the chickpeas on top is very
33:52similar to chanachat which is a big Indian street food this is very good I like to think as our pizza fixes an
34:01issue when you're having a takeaway and you want a curry or you want a pizza why not have both have
34:07us our pizza have you ever wondered what could happen if your two favorite teams fuse together I
34:14mean I'm team Italian so I'm happy to order a pizza I'm more team Indian so I would rather get a curry if
34:20only we could fuse the two together we can have you had a bizarre pizza Indian inspired pizza delivered
34:27straight to you so right now my business is a dark kitchen what's great about dark kitchens it's a
34:34scalability aspect there are low overhead costs therefore more profit margins available and in terms
34:41of numbers with the quarter million pound investment I want to have 10 new dark kitchens in the next five
34:47years and I want to be the pioneer of Indian style pizzas I now open the floor to any questions thank
34:53you I'm all mad out all a chief operating officer for Pizza Hut have you thought about how do you
34:58accelerate and scale your concept because my brand is still new I think in this first stage it's very
35:05important that I have the control because that way when people try is our pizza for the first time I can
35:10guarantee them a good quality and I can control that level of it I do want a franchise in the future but I
35:16think what's most important for the brand now is to develop a good reputation and have stand as a

35:30how are you gonna make sure you're creating more recipes that people come back to you the reason why
35:37is our pizza can do well it's because I'll be behind it and I've constantly be thinking of new ideas and I

36:51that and how's it going it's it's one of our highest performing pizza you go so there's this

37:58the name domestical because we want to make it as clear as possible exactly what audience we are
38:04appealing to we want homeowners to know that how easy and quick they can have an air-conditioning unit
38:10installed inside their home because I understand that when customers want air-conditioning they want it
38:16there and then I need a quote let me fix that for you whether you're hot or cold get the mystical on
38:29the phone and turn your house into a home domestical at the moment I'm currently working from home and
38:37it's not really suitable for being honest my wife hates it when I get a bulk order of air-conditioning
38:44units delivered and she's got a dragon through the corridor so we've created a virtual showroom if we

39:56yep there's a general skill shortage in the industry how will you recruit so at the moment Mark we've we
40:02run an apprentice base sort of thing I'll get the engineers in young we train them we teach them we show
40:08them the ropes I pride myself for my work and I feel like I am the best at what I do and if I can teach
40:15them how to install air-conditioning to my standards they will go a long way
40:19Dean what I want is just my bedroom air-conditioning how much for you Lord Sugar be free
40:28well then you won't be hired by me if you're giving things away giving things away for nothing

41:01I think the issue is the scalability of this business he thinks that he could double his business
41:10straightaway because he's overloaded at the moment when you go into a home in a domestic market you're
41:16going to install one unit maybe two or three but it's not a repeat business that you would generate
41:20in the commercial sector yeah I mean I think that the market has a bit of potential in the sense that
41:27we do occasionally have heat waves occasionally and when we do people are you know finding it tough to
41:36sleep or whatever he's got a good product you know right now someone's hot exactly said they're hot they
41:41can't sleep they want to whack it on they want it tomorrow yeah I think there's something there

45:45I think Dean is a fantastic bloke what you see is what you get with Dean um he wears his heart on his sleeve

48:04On Just Eat, it's 4.8.
48:06On Deliveroo...
48:07It's really high.

48:09So, I've been consistently good.

48:18And your idea is that by doubling up the amount of vans you've got,
48:23we're going to double our money.

48:33I've been a supervisor for one of the biggest air conditioning companies in the UK

48:42If I can get to that stage, I can run it a lot more smoother and better than what they've
48:47done.

48:50So, you're going to continue with the residential market.

48:59So, at the moment, 90% of my work is domestic.
49:01I just prefer the domestic market because that's where I think the gap is.

50:55What makes it special is we're honed in to just Indian-style pizzas.

51:00For example, if I went to Pizza Hut or Domino's, I wouldn't necessarily trust them in making authentic toppings.
51:06With the money, I would be able to develop my current kitchen to become a central hub and then develop other dark kitchens around it.
51:13It's a very cost-effective way of scaling and getting my pizzas out there to more people.
51:18So, what is in the dark kitchen then?
51:20So, with dark kitchen, you only need one person there.
51:23Because the ingredients are all cooked beforehand by professional chefs, you only need someone to assemble it.
51:28It's a lot cheaper than making a brick-and-mortar store because if you think of the space you need, it's smaller than this desk.
51:33So, my investment could fund a cup of new dark kitchens, is that right?
51:38Yes, correct.
51:39What do you do next?
51:40How do you fund the fourth one or the fifth one or the sixth one?
51:44Because the profit margins are so high, my goal was to have 10 within five years and I think that's very reachable.
51:50There are bigger brands for doing it even quicker than that at the moment.
51:53So, what's your profit potential in five years' time with 10 all singing and all dancing?
51:59So, we had around half a million pounds profit with the 10.
52:02Sounds good, but it's got to be done. It's got to be achieved.
52:07Now, Dean, according to your figures, your next set of accounts is going to show half a million.
52:12Yeah, before we come into this process, I had it done and it showed 11 months was 461.
52:16Right. And your guesstimate of profit on that?
52:19It's about 160.
52:20Right, okay. What are you going to do from the get-go, day one?
52:24I've given you the money. You're going to get a smaller warehouse of some kind?
52:28So, I'd get a base, even if it's just an office, a small office.
52:31So, that's going to cost a bit of money, yeah?
52:33Yeah.
52:34And then, next, two more vans?
52:36Two more vans and two more engineers, two more apprentices.
52:41Are you ever going to be in a position where you are not personally driving a van around?
52:46Yeah, so this is what the investment's for.
52:48It's going to give me the opportunity to come back off the tools and literally go to the jobs, quote them and just run the operation a lot more smoother.
52:55Right. You're a bright lad. You've listened to Anissa. In your opinion, why is your business about proposition to me than hers?
53:05Because mine's future-proof. We're getting hotter summers. People are trying to save money on their bills.
53:10It's the way the industry's going. It's getting busier and busier. My business has grown organically from the start.
53:16And you've seen what I can do with two people. Can you imagine what I can do if I had 24 people?
53:21So, Anissa, there's quite a big of a mountain to climb for you in the sense that he says, give me two new vans and I'll get a couple of new blokes and then I'll double my turnover.
53:32Right. That's what he says. You say that I'm going to open a dark kitchen. It's not going to be as quick.
53:39But with Lord Sugar, with your advice, with your guidance, this has the opportunity to be big. With my business, it is unique, special and stands out in the market.
