51:00for example if I went to Pizza Hut or Domino's I wouldn't necessarily trust them in making authentic toppings
51:05with the money I would be able to develop my current kitchen to become a central hub
51:10and then develop other dark kitchens around it
51:12it's a very cost effective way of scaling and getting my pizzas out there to more people
51:17so what is in the dark kitchen then?
51:20so with dark kitchen you only need one person there
51:23because the ingredients are all cooked beforehand by professional chefs
51:26you only need someone to assemble it
51:28it's a lot cheaper than making a brick and mortar store
51:30because if you think of the space you need it's smaller than this desk
51:33so my investment could fund a cup of new dark kitchens is that right?

51:40how do you fund the fourth one or the fifth one or the sixth one?
51:43because the profit margins are so high
51:45my goal is to have ten within five years and I think that's very reachable
